- While the steak is coming to room temperature, turn on your smoker to 225F and let it come to temp (~15 minutes).
- Place the steaks on the smoker and cook for 35-40 minutes at 225F, or unti lthe steaks reach an internal temperature of 115-120F.
- Next, remove the steaks from the smoker.
- In a cast iron skillet, over medium high heat add the butter. Let the butter melt and then add the steaks. Sear the steaks on all sides until it reaches an internal temperature of 135F for medium rare.
- Let sit for 5 minutes before cutting.
