Roasted potatoes and green beans make for a delicious and easy side dish! Complex carbs and a starch, all you need to do is add your favorite protein! These roasted vegetables are vegan and gluten-free!

Roasted Potatoes and Green Beans

Deliciously crispy potatoes and perfectly cooked green beans made all on the same baking sheet?! Technically yes...but the potatoes cooked by themselves first for a little bit.

Not everyone in my household follows a low carb diet, so on occasion I like to share some of the recipes I make for them. I try to make the sides as healthy as possible and with minimal ingredients.

This recipe just has green beans, potatoes, avocado oil and spices. There's just a little bit of prep and most of the time is spent hands off.

These green beans and potatoes were used for meal prep. I just added some Chicken Breasts and the prep was complete!

Why You'll love this Roasted Potato and Green Bean Recipe

  • Budget Friendly - I bought a giant 10# bag of potatoes at my local Aldis for around $5 dollars. Fresh green beans were under $3 dollars for a 16oz bag. I didn't use all of the potatoes, but by being in bulk I was able to save a ton!
  • Meal Prep - These roasted green beans and potatoes are an easy side to meal prep. All you have to do is cook your favorite protein and store them all together.

Ingredients

  • Russet potatoes: or your favorite type of potatoes. I just chose these because they were on sale and I wasn't going to eat them anyways LOL.
  • Fresh green beans: you can also use French cut green beans or frozen green beans that have been defrosted
  • Avocado oil: I love using avocado oil for cooking. You can also use any other high heat oil that you have on hand.
  • Seasonings: kosher salt, garlic powder, and black pepper

Tips & Tricks

  • You will need to cook the potatoes first they need extra time to cook. Make sure you flip them halfway through to ensure they are evenly cooked.
  • Line the cooking sheet with parchment paper or aluminum foil to make the clean-up process easier.

How to make Roasted Potatoes and Green Beans

  1. Preheat the oven to 375. Line a baking sheet with parchment paper.
  2. Wash and peel the potatoes. Cut them into slices (cut potatoes in half then into fourths, about 1 inch thick)
  3. Place the potatoes in a large mixing bowl. Add in 2 tablespoons avocado oil, and half the salt, black pepper, and garlic powder. With your hands mix until the potatoes are thoroughly coated.
  4. Place the potatoes on the baking sheet in a single layer.
  5. Cook the potatoes for 20 minutes
  6. In the same mixing bowl add the green beans, remaining oil, salt, pepper, and garlic powder. 
  7. After 20 minutes remove the potatoes from the oven. Flip the potatoes and add the green beans to the baking sheet.
  8. Roast the green beans and potatoes for 30 minutes 
  9. Remove the baking sheet from the oven. Garnish with parsley if desired.

Place potatoes into a mixing bowl. Mix together.

Place the potatoes on the cooking sheet and cook.

Using the same bowl add the green beans and mix together.

Flip the potatoes.

Add in the green beans and cook.

Remove and serve.

Substitutions

  • You can use baby potatoes and cut them in half instead of using whole potatoes.
  • Instead of fresh green beans you can use frozen green beans that have been thawed. If you don't thaw them first it might increase the cooking time.
  • If you don't have garlic powder, you can use fresh mined garlic instead.

What to serve with Roasted Potatoes and Green Beans

Chicken breast is such an easy choice to serve with this delicious side. You can also serve it with an Air Fryer Ribeye or Air Fryer T-bone Steak for a mouthwatering dinner.

How to store

Store leftover potatoes and green beans in an airtight container for up to 5 days.

How to reheat

Remove the lid from the container or transfer it to a microwave-safe plate. Microwave for 60-90 seconds on high.

FAQs

What can I add to green beans for taste?

Personally I went with my standard salt, pepper and garlic, but feel free to add more seasonings! Try adding in Italian seasoning and some red pepper flakes and top with some parmesan cheese for some added flair!

Are potatoes carbs or protein?

Potatoes are complex carbohydrates and contain very little protein.

Can I cook the potatoes and green beans at the same time?

You need to cook the potatoes by themselves first to ensure that the potatoes are fully cooked. After that you add the green beans to the baking sheet and cook the two together.
