How to make Traeger Smoked Pork Chops

  1. Let the pork chops come to room temperature.
  2. Turn the Smoker to 225F, and heat for about 15 minutes or until the smoker reaches temperature.
  3. Sprinkle the pork chops with salt and pepper
  4. Grease the grates and add the pork chops.
  5. Insert thermometer and cook for 45 minutes, flipping halfway. Remove once pork chops reach ~125F.
  6. Add the butter to a cast iron skillet over high heat. Once the butter is melted, add the pork chops, searing on each side. 
  7. Remove when the pork chops reach 145F.
  8. Let sit for 5 minutes before cutting.

Substitutions

If you do not have bone-in pork chops then you can always use boneless pork chops. They taste just as great as the bone-in.

Reverse Sear Pork Chops

Reverse searing pork chops in a cast iron skillet after they have been cooked on a smoker is a game-changer. This will create the perfect combination of tenderness and caramelized crust for your pork chops.

This technique involves a two-step process that starts with slow smoking the pork chops to infuse them with smoky flavors and then finishes with a hot sear to achieve that irresistible golden-brown crust.

After being smoked to juicy perfection, the pork chops are ready for the final touch of greatness through reverse searing. By gently cooking them at a low temperature in the smoker, the chops are allowed to soak up the smoky essence while retaining their moisture.

Once the internal temperature reaches the desired level (around 125F), they are transferred to a scorching hot cast-iron skillet or grill for a brief sear. This method locks in all the flavors, resulting in a succulent and tender interior, and a delightful caramelized exterior that adds a burst of flavor and texture to every bite.

Store any leftover smoked pork chops in a glass airtight container in the fridge. It will last up to 3-5 days. In the morning, slice up any extras and make a delicious breakfast like I did in this leftover steak breakfast.

How to reheat

Remove your pork chops from the refrigerator. Heat a cast iron skillet over medium-high heat. Slice your pork chops into thin slices. Add the pork chops to the skillet and cook for 1-2 minutes on each side.

How long should I smoke pork chops?

The smoking time for pork chops can vary depending on the thickness of the chops and the temperature of your smoker. As a general guideline, pork chops typically take around 45 to 90 minutes at a smoker temperature of 225-250°F.

Keep in mind if you're going to reverse sear to finish cooking that the time may be on the lower end. Use a meat thermometer to ensure the pork chops reach an internal temperature of 145°F for safe consumption.

Can I brine pork chops before smoking?

Brining pork chops before smoking can enhance their juiciness and flavor. Brining involves soaking the chops in a saltwater solution, often with additional seasonings, for several hours or overnight. The saltwater helps the pork retain moisture during the smoking process.

Should I sear the smoked pork chops?

While it's not necessary, searing the smoked pork chops after they have been smoked adds an appealing crust and additional flavor. For this recipe I took the pork chops off before they reached 145F and finished cooking them in a cast iron skillet by searing them.
