Ingredients

- Zucchini: fresh medium zucchini, chopped into 2-3 inch chunks
- Avocado oil: I use avocado oil or an animal fat to coat the Blackstone so that the zucchini does not stick to the grill. Avocado oil and animal fats such as tallow, lard and duck fat are good for cooking at high temperatures because of their high smoke point. If you don’t have any of the above you can use, butter, or ghee.
- Seasonings: fresh minced garlic, Italian seasoning, coarse salt, ground black pepper

How to make zucchini on the Blackstone Griddle
- First wash the zucchini. Then cut the zucchini into 2-3 inch chunks.
- In a large bag or large bowl add the zucchini, oil, minced garlic, Italian seasoning, salt and pepper.
- Zip the baggie shut and shake until the zucchini is evenly coated with seasoning.
- Preheat the blackstone to medium high heat. Add the zucchini to the hot griddle.
- Cook the zucchini for 2-3 minutes and then flip and cook for an additional 1-2 minutes. Zucchini should be al dente and golden brown on the sides.
Substitutions
If you don’t have any zucchini on hand, you can use yellow squash instead.
These zucchini have a simple seasoning of coarse or kosher salt, pepper, garlic and Italian seasonings. If you don’t have fresh garlic on hand you can use garlic powder instead.
You can also top with parmesan cheese if you like.
If you don’t have a Blackstone grill you can also make this recipe in a cast iron skillet.

Store leftover zucchini in a glass air tight class container for up to 5 days.

How to reheat
Place on a plate and microwave for 45 seconds or until warm. You can also reheat these in an air fryer. Turn the air fryer to 390. Cook for 3-4 minutes or until at desired temperature.

It depends on the type of vegetable, but typically it takes less than 20 minutes to cook vegetables on a griddle.
