Easy Garlic Broiled Chicken Thighs

If you're looking for a quick and easy chicken thigh recipe. This one's for you! It's also a great recipe for beginners! It'll sure to become a favorite recipe because of its simplicity.

I'm a dark meat girl through and through. I grew up eating grilled chicken thighs multiple times per week for dinner. Now that I live in an apartment, honestly I've gotten kinda lazy and don't want to walk down the three flights of stairs to grill out.

I know. I can literally see the grill from my window too. I'M LAZY.

Hence this super easy broiled chicken recipe.

Also, I prefer bone in skin on chicken thighs as opposed to boneless skinless chicken thighs or chicken breasts. Honestly I feel they retain moisture better and are more juicy and tender!

The only down fall is they take a little bit longer to cook than their boneless counterparts. BUT good news is you can save the bones and make yourself some homemade bone broth!

You can use the bone broth to make make my Instant Pot Low Carb Cauliflower Soup, Instant Pot shredded chicken breasts or simple sip on it.

Ingredients

  • Chicken thighs: I used bone in skin on chicken thighs. The skin is delicious and where all of the fat soluble vitamins are!
  • Oil: I used avocado oil, but you can also use olive oil or melted butter
  • Seasonings: kosher salt, ground black pepper, fresh garlic, fresh lemon juice, fresh parsley

How to make broiled chicken thighs

These crispy baked chicken thighs are pretty straight forward. It only uses a handful of ingredients. It's the easiest chicken thighs recipe I've made in a REALLY long time.

  1. Pre-heat your oven to broil (high heat if there's a broiler setting). Make sure the oven rack is one below the top rack, too high will burn the chicken thighs. 
  2. Grease the bottom of a 9x9 casserole dish, roasting pan or baking dish. Next, place chicken thighs skin side up in the casserole dish in a single layer.
  3. Combine the avocado oil, salt, pepper, garlic and lemon juice in a small bowl. Brush the chicken thighs with the oil mixture, save some for basting. 
  4. Broil chicken for about 22-24 minutes in the middle of the oven, flipping around 7 to 8 minute mark and again at 13/14 minute mark. Baste with the oil mixture after turning. Remove from the oven when the chicken reaches 165 degrees. Let the chicken rest about 5 minutes before serving. Garnish with parsley.

Recipe tips:

  • Store leftovers in an airtight container for up to 5 days
  • Check chicken internal temperature with a meat thermometer in the thickest part. Make sure it reaches 165F
  • If you use boneless chicken thighs, reduce cooking time to 7-8 minutes or until the chicken reaches 165F
  • If you don't have a baking dish, you can even use a rimmed baking sheet.

Other flavor profiles to try

If you're looking to switch things up, try adding in some Worcestershire sauce, red pepper, chili powder, brown sugar, or soy sauce to the oil or butter mixture.

What to serve with oven broiled chicken thighs

If you're trying to keep it low carb, serve these broiled chicken thighs with air fryer broccolini and air fryer spaghetti squash. You can cook your vegetables in the air fryer while the chicken is cooking under the broiler.

Or serve it with this Instant Pot mashed cauliflower,Air Fryer Frozen Brussel Sprouts, sautéed cast iron Brussels sprouts with bacon or griddled asparagus for even more low carb side dishes.

FAQs

How long to broil chicken thighs?

Bone in chicken thighs take about 22-24 minutes to broil and boneless skinless chicken thighs take about 14-16 minutes to broil. Also double check with a meat thermometer to make sure they're fully cooked. Chicken should reach an internal temperature of 165F.

What temperature to broil chicken thighs?

Turn your oven to broil. Make sure that the rack for the chicken is in the middle of the oven. If the rack is too high in the oven the chicken will burn under the broiler and the meat will not have reached 165F.

      Yes, I'd cook it at 390F for 15-16 minutes flipping half way.
