Ingredients

  • Fresh Brussel Sprouts – you can probably do frozen too but make sure they are thawed before putting them on your Blackstone. You don’t want to warp your grill top.
  • Bacon – I used uncured bacon, but any kind will do
  • Seasonings – coarse salt or kosher salt and pepper. You can also top with balsamic glaze before serving.

Tips & Tricks

You need to make sure you cook the Brussel sprouts long enough so that they are not tough. You may have to remove the smaller halves from the Blackstone so they don’t get over cooked.

The larger sprouts may need a little more time cooking to get tender.

Tools to make this easy recipe

  • I have the 22 inch portable tabletop flat griddle grill station. It’s perfect for the RV travel life! I also have friends that have the Blackstone Adventure Ready 2-Burner 28″ Outdoor Griddle

How to Make Brussel Sprouts on the Griddle

The best way to grill Brussel sprouts by far is on a flat top grill. You don’t have to worry about aluminum foil or little sprouts slipping through the grill grates!

  1. First place the bacon on the Blackstone Griddle. Cook bacon until it’s crispy. Remove the bacon from the griddle and place on a few paper towels. Chop the bacon once cooled.
  2. Next cut the Brussel sprouts in half. Place the fresh Brussels onto the hot grill in a single layer and coat them in bacon grease.
  3. Top the Brussel sprouts with salt and pepper. Cook on medium with hood closed for 4 minutes. Flip the Brussels and cook for an additional 4-5 minutes until tender and charred.
  4. Remove Brussel sprouts from the griddle and transfer to a large bowl. Place the chopped bacon on top of the Brussel sprouts. Mix well
  5. Optionally top with balsamic glaze.
  6. Serve immediately.

Stovetop Directions

If you don’t have a griddle or flat top grill, make this recipe in a cast iron skillet. Here’s my Sautéed Cast Iron Brussels Sprouts with Bacon recipe for step by step directions.

Substitutions

If you don’t eat pork, you can substitute pork bacon with turkey bacon or beef bacon. I recently found out that beef bacon is an actual thing! They carry it at WholeFoods.

If you want to change up the flavor profile, try adding fresh garlic or garlic powder and onion powder. You can even add a bit of balsamic vinegar or lemon juice to the griddle while the Brussel sprouts are cooking!

Top with parmesan cheese or balsamic glaze.

What to serve with Brussel Sprouts on the Blackstone

So I meal prepped for a few days and I paired these bacon Brussel sprouts with honey teriyaki Blackstone Salmon and Blackstone Zucchini.

Next time I make these Brussel sprouts on the grill, I’m also going to throw on some lemon garlic shrimp, Teriyaki Chicken Thighs, and pork chops on the Blackstone Griddle.

How to store

Store in a glass airtight container up to 5 days

How to reheat

Transfer to a plate or bowl and microwave for 60-90 seconds until warm.

FAQs

How to cook Brussel sprouts on a grill

Since you don’t want any Brussel sprouts falling through the grill grates, first you need to place aluminum foil on the grill. Then spray or coat the foil with oil. Then cook the Brussel sprouts until tender and with a nice char

Do I need to remove the outer leaves?

I only remove the outer leaves if they are starting to shrivel.

Do you need to soak brussel sprouts before cooking?

It depends. If you grill the brussel sprouts on low for a longer period of time you do not need to soak or blanch the brussel sprouts. But if you want to throw the brussel sprouts on the griddle on high heat to sear and make the edges crispy, you’ll need to pre-cook them a bit to make them tender or you’ll end up with tough brussel sprouts.

Do you cut brussel sprouts before roasting?

I cut all of my brussel sprouts in half before roasting unless they are super small. They cook quicker when they are cut in half.

Are grilled brussel sprouts good for you?

Brussel sprouts are a cruciferous vegetable and rich in vitamins and minerals like Vitamin C, Vitamin K, Calcium, Iron, and Potassium. Read more about brussel sprout nutrition.
