Craving a refreshing, high-protein treat? This Peppermint Protein Ice Cream is made with just two simple ingredients in the Ninja CREAMi! It’s smooth, creamy, and perfect for a guilt-free dessert or post-workout snack.

Peppermint Protein Ice cream

If you love the refreshing taste of peppermint and want a high-protein dessert, this peppermint protein ice cream recipe is for you! It's made with my homemade unsweetened almond milk and CSE white chocolate peppermint protein powder.

This ice cream is creamy, delicious, and a healthier alternative to store-bought ice cream. Plus, with the Ninja CREAMi, it’s incredibly easy to whip up a batch of this festive and protein-packed dessert!

Around Christmas time, CSE was having a sale and I stocked up on a bunch of different protein powders. I got a 10 pack of the white chocolate peppermint protein packets (which I used one in this recipe), and I also got a couple of the protein variety packs because I wasn't ready to commit to another 30 bag serving without trying the flavor a few times.

So far, the vanilla and coconut cream are my favorites; I have a 30-serving bag of each of them. Some of theirs have too much of an artificial taste for my liking, but others have been good; I just didn't like them enough to commit to a large bag of it.

I've made this vanilla protein ice cream using the vanilla, cookies and cream protein ice cream using the cookies and cream packet, keto coconut protein ice cream using the coconut cream and this banana protein ice cream using the banana fosters packet.

Ingredients

I'm not kidding; this ice cream recipe is so simple! It has just 2 ingredients.

  • Homemade Unsweetened Almond Milk. Any almond milk will do, but I prefer homemade. The flavor is more pronounced.
  • White Chocolate Peppermint Clean Simple Eats protein powder. I bought a 10-pack of their single servings, but if you love this flavor, you can get a 30-serving bag.

Nutrition Information

For the whole pint: 247kcals, 25g protein, 10g total carbs, 3g fiber, 7g net carbs, 13g fat

**The above nutrition facts are based on using my homemade almond milk recipe. I erred on the side of caution with these numbers. When you make the homemade almond milk, you filter out parts of the almonds that do not get blended down fine. So, the above macros may be higher than the actual amounts.

Tools to make this easy recipe

This recipe is made using the Ninja Creami ice cream maker. Below are links to where you can purchase them.

  • Ninja Blender – I love my ninja blender. Not only can you use it for the obvious, like smoothies and shakes, but it also works perfectly for making the ice cream base!
  • Ninja Creami ice cream maker – I am in love with this Ninja Creami. 
  • Ninja Creami Pints - I opted for these pints because they were about half the price but be weary if you need them quickly; it took about three weeks to get here. They did have some prime options for other pint containers, but I was being thrifty.

How to make Peppermint Protein Ice cream with your Ninja Creami

Follow this step by step guide for making this recipe.

  1. Mix the base. Add all ingredients to a blender. Blend until smooth.
  2. Freeze the mixture. Next, transfer the mixture into the Ninja Creami pint and place the lid on. Transfer the pint to the freezer and freeze for at least 24 hours.
  3. Spin It in the Ninja Creami. After 24 hours, remove the lid and place the pint into the pint holder. Place the lid with the blade on top and lock it into place. Run the Ninja Creami on the lite ice cream function.
  4. Adjust as Needed: After the first spin, the texture will be crumbly. This recipe needs 2 re-spins for the best texture. You can also add a tablespoon of almond milk and re-spin instead. Repeat this step until the ice cream reaches a perfectly creamy consistency.
  5. Serve and Enjoy: Scoop the protein-packed ice cream into a bowl or enjoy it straight from the container. For a little extra flair, you can top it with your preferred toppings.

Optional Mix-ins & Toppings

Add a little more flavor to this recipe by adding any of the following:

  • Crushed peppermint candies for extra crunch
  • Mini chocolate chips or cacao nibs
  • Whipped coconut cream

Freeze for at least 24 hours

Scoop in a bowl and add desired toppings.

Substitutions

Below are some easy swaps for this recipe.

  • No almond milk? Use oat milk, coconut milk, or cashew milk for a different flavor.
  • Want a thicker texture? Add 1 tablespoon of Greek yogurt or coconut cream to make it extra creamy.
  • No peppermint protein powder? Use vanilla or unflavored protein powder and add in ½ teaspoon of peppermint extract.

How to store

When freezing the ice cream pint, make sure the lid is secured, and it's placed in the freezer on a flat surface.

If you don't eat all of the ice cream in one sitting, make sure to flatten the top of the ice cream, replace the lid, and store it in the freezer. When you're ready to eat it again, you will need to run it on the ice cream or lite ice cream function for two spins.

Notes

If you don’t want to make homemade almond milk you can use a store brand. Using a different kind of milk will change the nutrition profile and the texture of the ice cream.
