I was really surprised at how amazing this Healthy Vanilla Ice Cream in the Ninja Creami came out. It is made with minimal ingredients and is super easy to make! I didn't have any vanilla bean paste on hand so I went with vanilla extract.
But you better believe next time I'm making a vanilla bean ice cream recipe in the Ninja Creami!
If you would like to boost the protein content, you can add a scoop of Vanilla Ice Cream and then add a scoop each of Chocolate Protein Ice Cream and Ninja Creami Strawberry Ice Cream. This makes a great Neapolitan flavor.
Or you can just add a few scoops of your favorite unflavored or vanilla protein powder to the ice cream base before freezing.

How is this a Low Carb Vanilla Ice Cream?
This vanilla ice cream recipe is low in carbs because there is no added sugar. The sweeteners in this recipe are stevia extract and Besti Monk Fruit Blend. Also Fairlife milk is lower in carbs and higher in protein than other milks.
The Fairlife milk is lactose free, but heavy cream and half and half do contain a very small amount of lactose. Tolerance is person to person, depending on your tolerance.
You won't be able to tell that this is a low carb vanilla ice cream recipe! It's super creamy just like regular vanilla ice cream!
There's just 7g net carbs and less than 150 calories per serving. It's a delicious sugar free ice cream if you're following a low carb or keto diet.

- Half and half or heavy cream – it’s hard to mimic the creaminess you get from half-and-half or heavy cream in ice cream. Keep in mind that this does also increase the calories and fat in the recipe.
- Vanilla extract – you can use either liquid vanilla extract or you can even use vanilla bean paste for a richer vanilla flavor
- Stevia extract – I love the convenience of NOW Organic Stevia Extract
- Besti Monk Fruit Erythritol Blend – I’ve been loving the Besti Brand Sweeteners. I have a few of them that I alternate between.
- Optional mix ins or ice cream toppings: low sugar or sugar free chocolate chips or sprinkles if you're not watching your carbohydrate intake.

A big reminder to plan ahead for this recipe. As it will take up to 18-24 hours to freeze.

- Ninja Blender – I absolutely love my ninja blender. Not only can you use it for the obvious like smoothies and shakes, but it works perfect for making the ice cream base as well!
- Ninja Creami ice cream maker – I honestly am in love with this Ninja Creami. Before I bought these extra Ninja Creami Pints I was using it every day. Now I make ice cream in my Ninja Creami in bulk, doing 4-5 recipes at a time. I opted for those pints because they were about half the price, but be weary if you need them quickly, it took about 3 weeks to get here. They did have some prime options, but I was being thrifty.
How to make Ninja Creami Vanilla Ice Cream
- Add all of the ingredients into a blender or mason jar. Blend or shake until the ingredients are well combined.
- Transfer the liquid to the Creami ice cream pint and place the lid on. Freeze for 18-24 hours.
- Once the ice cream base is completely frozen, remove it from the freezer.
- Remove the lid and transfer the pint into the Ninja Creami pint holder.
- Place the blade into the lid and then place the lid onto the pint holder.
- Lock the ice cream into the Creami and select either the ice cream or soft serve selections.
- If after one round of spinning your ice cream is a little dusty in texture and not creamy, select the “spin again” setting.
- Optional: If you would like to add chocolate chips, make a hole in the ice cream and drop in your chocolate chips. Next select the “mix in” setting and let that run.
- After it’s finished remove the pint from the holder and enjoy.
Substitutions
If you can’t find Fairlife milk, you can use skim or 1% milk of your choice. You can also use any milk alternative instead of Fairlife milk to reduce the calorie content of this vanilla ice cream.
If you are wanting a higher calorie ice cream, you can substitute the half and half and/or milk with heavy cream. This would be good for someone wanting to gain weight, someone who is having trouble getting enough calories in, or if you are intermittent fasting and need high calorie food choices.
If you are lucky enough to have vanilla bean paste in your pantry, you can substitute the vanilla bean paste for the vanilla extract.
How to store
- Store this high protein banana ice cream in the freezer with the lid on and on a flat surface. It should last 3 to 6 months in the freezer as long as the lid is on tight. If you only eat a portion of it, make sure to smooth the top layer flat so you can spin it in the Ninja Creami when you’re ready to eat.
- You will need to run the ice cream through the Ninja Creami again once it has been fully frozen.
