Ninja Creami Strawberry Ice Cream

If you know me at all, I ABSOLUTELY love ice cream. I've been completely OBSESSED with my Ninja Creami Ice Cream Maker.

This strawberry ice cream recipe uses both a powdered Monk Fruit Erythritol blend and liquid stevia extract, so it's lower in carbohydrates than a typical strawberry ice cream.

What is the Best Ice Cream Maker?

I am absolutely in love with my new Ninja Creami ice cream maker. Previously I was just using a kitchen aid attachment for my kitchen aid mixer, but since purchasing the creami I've been using it almost every single day (except when I'm away from home lol).

Yes, it says it takes 24 hours to make ice cream but I've only let it freeze for 12 hours and it still comes out great! On these quick freeze ice creams I just use the "soft serve" program.

Ingredients for Ninja Creami Strawberry Ice Cream

  • Heavy cream - I prefer to use a grass-fed heavy cream whenever possible. You can also use half and half as a heavy cream substitute.
  • Frozen Strawberries - since I make strawberry ice cream so frequently I get the large family packs
  • Vanilla extract - you can use either liquid vanilla extract or you can even use vanilla bean paste for a richer vanilla flavor
  • Stevia extract - I love the convenience of NOW Organic Stevia Extract
  • Powdered sweetener - I've been loving the Besti Brand Sweeteners. I have a few of them that I alternate between.
Ingredients needed to make low carb strawberry ice cream

Choose your sweetener

I prefer to reduce my carbohydrate intake when possible. For that reason I prefer to use a mixture of liquid stevia and a powdered or granulated sweetener. In this recipe I used stevia and a powdered monk fruit and erythritol blend.

The sweetener you use greatly depends on your personal choice. I have friends that can't use stevia or erythritol because they can taste the bitterness or aftertaste, and they choose allulose or monk fruit instead.

Those two keto sweeteners tend to be best tolerated for super tasters or those who tend to have issues with artificial sweeteners or low carb sugar replacements.

If you're not concerned about your carbohydrate or calorie intake you can use sugar or honey in this recipe instead.

Low Carb Sweeteners

  • Granulated Monk Fruit with Allulose
  • Powdered Monk Fruit with Allulose
  • Granulated Allulose
  • Powdered Allulose
  • Monk Fruit Sweetener with Erythritol
  • Granulated Erythritol
  • Powdered Erythritol

How to make strawberry ice cream in your Ninja Creami

  1. First, add all of the ingredients into a blender. Blend until the Strawberries are completely pureed into the heavy cream or half and half.
  2. Then, transfer the liquid to the Creami ice cream pint and place the lid on. Freeze for 18-24 hours.
  3. Make sure to not fill the liquid over the fill line or the blades on the Creami might not be able to work properly.
  4. Once completely frozen, remove the lid from the ice cream pint.
  5. Place the pint in the ice cream pint holder. Make sure that the blade is correctly inserted into the top. Lock the top on properly.
  6. Next place the ice cream holder into the Ninja Creami, making sure that it slides in and locks correctly.
  7. Turn your Ninja Creami maker on, then select the "ice cream" setting. After it is spun, check the ice cream texture. If it is powdery or clumpy place the lid back on, lock it into place and then select the "re-spin" setting.
  8. After it runs through that setting you should have perfectly creamy and delicious strawberry ice cream!

Strawberry Ice Cream Nutrition

  • This recipe serves 3. Each serving is ⅔ cup.
  • Per serving (⅔ cup) there is 287kcals, 16g total carbs (8g sugar alcohols, 1g fiber, 7g net carbs), 2g protein, and 29g of fat.
  • The Monkfruit Erythritol blend I used has 24g total carbs, of which 24g are from sugar alcohols. So this makes it 0g net carbs per serving from the sweetener.

Ice Cream Toppings for Strawberry Ice Cream

If you're wanting to keep your carbs on the lower side, you can add in stevia sweetened chocolate chips or unsweetened coconut flakes or even chopped nuts to your ice cream. After you do the first spin on the Creami ice cream maker, remove the pint and make a 1 inch very deep hole in your ice cream.

Then add your desired toppings into the hole. Then replace the lid with the blade onto the pint and lock it into place. Then click the "mix-in" setting.

This will incorporate your low carb ice cream toppings throughout the ice cream.

If you're not watching your carb intake, top your ice cream with sprinkles, sliced bananas, sliced strawberries, or even hot chocolate!

How to store

Store the strawberry ice cream in the freezer with the lid on. Mine never lasts longer than a few days. It should last 3 to 6 months in the freezer.

How to make this ice cream dairy free?

Replace the heavy cream with coconut milk or your favorite non-dairy milk.

How many next carbs does this strawberry ice cream have?

There is 16g total carbs and 7g net carbs per serving.

Can I add protein powder or collagen protein to this recipe?

Yes, you can add either to this recipe. Just take out a few table spoons of heavy cream so it doesn't go past the fill line.

  • 1 cup heavy cream or half and half
  • 1 cup frozen strawberries
  • ½ teaspoon vanilla
  • 5 drops stevia extract
  • 2 tablespoon Besti Monk Fruit Erythritol Blend

Instructions
 

  • Add all of the ingredients into a blender. Blend until the ingredients are well combined.
  • Transfer the liquid to the Creami ice cream pint and place the lid on. Freeze for 18-24 hours.
  • Once the ice cream base is completely frozen, remove it from the freezer.
  • Remove the lid and transfer the pint into the Ninja Creami pint holder.
  • Place the blade into the lid and then place the lid onto the pint holder.
  • Lock the ice cream into the creami and select either the ice cream or soft serve selections.
  • If after one round of spinning your ice cream is a little dusty in texture and not creamy, select the "spin again" setting.
  • Enjoy and serve with your favorite ice cream toppings.

    I am going to try this recipe….what can I use in place of stevia extract…I have agave. And stevia powder…I also have honey available…recommendations for amounts in place of the extract you use? Thanks!

      You can probably use a teaspoon of honey or agave in place of the stevia or omit the stevia all together. I use it to counter act any after taste that the erythritol monk fruit blend might have

      Honestly, I haven't tested it with almond milk. You can try and run it on the lite ice cream setting. You might just have to re-spin it a few times to get the desired consistency.

    I made this recipe and it kept coming out powder. I did the respin 2x. also after tasting it, it had a greasy after taste. Is there a recipe that calls for cream cheese and strawberries?

      Monk Fruit is a sweetener and xanthan gum is an emulsifier. You can sub the monk fruit with a different kind of sweetener.

    I have the bigger ice cream maker, so I had to adjust to fill. I used three-quarter cups fresh strawberries, and 4 tbls of my own powdered sweetener version which has erythritol, Monk fruit, and Stevia in it. I only used half a teaspoon of vanilla. I used one cup heavy cream and half a cup boxed, plain unsweetened coconut milk. I can’t believe how much better the fresh strawberries taste! I’ve always used frozen, but I got a deal on fresh local ones. This is amazing ice cream.
