Roasted Green Beans and Potatoes

Roasted potatoes and green beans make for a delicious and easy side dish! Complex carbs and a starch, all you need to do is add your favorite protein!

Ingredients

  • 8 small russet potatoes cut into 1 inch cubes/slices
  • 1 pound fresh green beans ends trimmed
  • 3 tablespoon avocado oil divided
  • 1 tablespoon garlic seasoning divided
  • 2 teaspoon salt divided
  • ½ teaspoon black pepper divided

Instructions

  • Preheat the oven to 375. Line a baking sheet with parchment paper.
  • Wash and peel the potatoes. Cut them into cubes (cut potatoes in half then into fourths, about 1 inch thick)
  • Place the potatoes in a large mixing bowl. Add in 2 tablespoons avocado oil, and half the salt, black pepper, and garlic powder. With your hands mix until the potatoes are thoroughly coated.
  • Place the potatoes on the baking sheet in a single layer.
  • Cook the potatoes for 20 minutes
  • In the same mixing bowl add in the green beans, remaining oil, salt, pepper, and garlic powder.
  • After 20 minutes remove the potatoes from the oven. Flip the potatoes and add the green beans to the baking sheet.
  • Roast for another 30 minutes
  • Remove the baking sheet from the oven. Garnish with parsley if desired
