This keto strawberry ice cream recipe is low calorie, high protein, AND tastes delicious! It’s also gluten-free! You can even make it dairy-free or vegan with just 1 swap!

  • Healthy Dessert Option – 6g of protein per serving with just 67 calories per 2/3 cup serving. Or eat the entire pint for just over 200 calories and 18g of protein.
  • Easy Recipe – this recipe only calls for 3 ingredients – which are likely already in your pantry/refrigerator if you follow a low carb diet.
  • Low Calorie Ice Cream – its not often you find ice cream that is low in calories, but this recipe has just over 200 calories for the entire pint!

Ingredients

  • Frozen Strawberries – since I make strawberry ice cream so frequently I get the large family packs of frozen strawberries.
  • Fairlife milk – Fairlife is a great high protein, low carb, low fat milk option. And it doesn’t have those funky gums or emulsifiers than can mess with your stomach!
  • Low-Carb Sweetener – I’ve been loving the Besti Brand Sweeteners. I have a few of them that I alternate between.

Keto Strawberry Ice Cream Nutrition

This 3 Ingredient Keto Strawberry Ice Cream has 67kcals, 2g of fat, 14g total carbs, 1g fiber and 5g net carbs per serving.

When you think of keto ice cream you tend to see ones that are higher in calories. I deliberately made mine lower in calories that way it could fit into my macros easier and so that other that don’t necessary follow a keto diet could enjoy it as well.

How to increase the fat in keto ice cream

  • Use Fairlife whole milk instead of 1%
  • Use Heavy Cream Instead of Milk
  • Use Coconut milk or diluted coconut cream
  • Add MCT oil or coconut oil

How to increase the protein in keto ice cream

  • Add a grass-fed whey protein
  • Add whey protein isolate
  • Add unflavored Collagen Protein
  • Add Beef Gelatin

Tips & Tricks

Plan ahead for when your sweet tooth starts calling. This keto strawberry ice cream takes a full 18-24 hours to freeze before it can be blended in the Ninja Creami. Be sure to make this recipe the day before you hope to eat the ice cream.

If you ice cream ever comes out powdery after spinning, do either one of 2 options

  1. Spin Again
  2. Add 1-2 tablespoons of liquid and then spin again

Those have been my two tricks to getting delicious homemade keto ice cream with the Ninja Creami. And most times you don’t even need to use those tricks.

Tools to make this easy recipe

  • Ninja Blender – I absolutely love my ninja blender. Not only can you use it for the obvious like smoothies and shakes, but it works perfect for making the ice cream base as well!
  • Ninja Creami ice cream maker – I honestly am in love with this Ninja Creami. Before I bought these extra Ninja Creami Pints I was using it every day. Now I make ice cream in my Ninja Creami in bulk, doing 4-5 recipes at a time. I opted for those pints because they were about half the price, but be weary if you need them quickly, it took about 3 weeks to get here. They did have some prime options, but I was being thrifty.

How to make keto strawberry ice cream

  1. Add all of the ingredients into a blender. Blend until the ingredients are well combined.
  2. Transfer the liquid to the Creami ice cream pint and place the lid on. Freeze for 18-24 hours.
  3. Once the ice cream base is completely frozen, remove it from the freezer.
  4. Remove the lid and transfer the pint into the Ninja Creami pint holder.
  5. Place the blade into the lid and then place the lid onto the pint holder.
  6. Lock the ice cream into the Creami machine and select either the ice cream or soft serve/lite selections.
  7. If after one round of spinning your ice cream is a little dusty in texture and not creamy, select the “spin again” setting.
  8. Enjoy and serve with your favorite ice cream toppings.

Substitutions

  • If you are wanting a higher calorie ice cream, you can substitute the milk with heavy cream or half and half. This would be good for someone wanting to gain weight, someone who is having trouble getting enough calories in, or if you are intermittent fasting and need high calorie food choices.
  • If you can’t find Fairlife milk, you can use skim or 1% milk of your choice.
  • You can also use any milk alternative instead of Fairlife milk to reduce the calorie content of this low carb strawberry ice cream.

  • Fresh strawberries can be used in place of frozen

How to store

  • Store this keto strawberry ice cream in the freezer with the lid on. It should last 3 to 6 months in the freezer as long as the lid is on tight.
  • Before you go to eat the ice cream after it’s been in the freezer you will either need to spin it again or you can let it sit out on your counter top for 10-15 minutes to soften up.

FAQs

Does keto ice cream kick you out of ketosis?

The goal of eating keto ice cream is so that it doesn’t kick you out of ketosis. But with most things, if you eat too much of it, it may kick you out of ketosis.

Are strawberries good for keto?

Yes! Strawberries are considered keto-friendly because they are low in sugar and low in carbs. Just be mindful of how many you eat so you don’t over do it! In general, berries are some of the lowest carb fruits.

What makes keto ice cream keto?

A keto ice cream is one in which the carbohydrates are low. The fat content can either be high or low depending on your needs. In terms of macros, the most important to watch is carbohydrates.

  • 2 tbsp Besti Monk Fruit Erythritol Blend monkfruit blend or allulose blend
  • 1 ⅓ cup fairlife milk

Instructions

  • Add all of the ingredients into a blender. Blend until the ingredients are well combined.
