Cilantro Lime Cauliflower Rice | Instant Pot Cauliflower Rice

Cilantro Lime Cauliflower Rice

So, I think I’ve probably said this a ton of times, but the instant pot by far is my favorite kitchen gadget.

It has completely changed the way I cook and meal prep for the week.

It’s taken traditional foods that I normally dislike (like cauliflower) and turned them into foods that I eat on a normal basis like this Cilantro Lime Cauliflower Rice recipe.

So, this recipe is super easy and requires no additional pots or pans other than your instant pot.

How to make cauliflower rice

Roughly chop the cauliflower into florets. I went to a blogger event in Tampa a few years ago and was given these knives and this cutting board and they are my absolute favorites. But they are super sharp so watch your fingers.

After you’ve roughly chopped the cauliflower, place the florets into a silicone trivet and place that in your instant pot.

Next put 1 cup of water into your instant pot.

Put the lid on your instant pot and make sure the nob is set to closed.

Hit the manual button, high pressure and set time to 1 minute.

After your instant pot has cooked the cauliflower for 1 minute at pressure, hit “cancel” and use quick pressure release method to release pressure.

After all the pressure is gone, remove the lid to the Instant Pot.

Cilantro Lime Instant Pot Cauliflower Rice

Carefully removed the trivet that contains the cauliflower.

Drain the water from the stainless steel pot and return the pot to the instant pot.

Place extra virgin coconut oil in the pot. Turn your Instant Pot to sauté mode.

With a potato masher or wooden spoon, mash cauliflower until it is a rice consistency.

Add the juice of 1 lime to the cauliflower. Stir and let cook for 1 minute.

Remove cauliflower from heat.

Top with minced cilantro.

Cauliflower Nutrition

Following a low carb diet, many people are concerned about carbs. So is cauliflower a low carb vegetable? Yes! Cauliflower is a non-starch vegetable.

How many carbs are in cauliflower? Per 100g of raw cauliflower there are 5g of total carbs, 2g fiber and 3g of net carbs. Per 100g of raw cauliflower there is 1.9g of protein and 0.3g of fat. Cauliflower also contains 299mg of potassium per 100g which is great on a keto diet.

Ingredients

  • 1 head of cauliflower

Instructions

    This was DELICIOUS and so easy! I substituted 1 tablespoon of Olive Oil instead of the 2 tablespoons of coconut oil. A keeper for sure and WW Freestyle friendly too!
