Roasted Red Pepper Cauliflower Mash

I’m not a huge fan of mashed potatoes at all. I’m actually not really a huge fan of white potatoes either unless they’re deep-fried and topped with bacon and cheese. So when it comes to the holidays and friends and family ask for mashed potatoes, I usually whip up some cauliflower mashed potatoes. Today I decided to put a spin on my normal cauliflower mash recipe to make this Roasted Red Pepper Cauliflower Mash.

When it comes to the holidays with my family it’s always chaos, but one thing we can always agree upon (except for my mom), is that we all love wine 🙂

I recently stopped by total wine and picked up around a case of wine, all of which I had never had before except for Coppola Claret, because that is one of my favorite wines and it’s the cheapest place I can find it at only $13.97 a bottle! Another reason for my splurge on all of the wines is because I am headed to San Fransisco and Napa, California in 16 days!!!

I am so excited! I have never been to California before, let alone Napa or San Fran! We have already booked our hotel, plane tickets and rental car and we were even able to get tickets to Alcatraz. I was a little disappointed that we were not able to book a trip on the wine train because we are visiting Monday through Friday, but that just means that we will have to book another trip to visit again!

The Saturday that we get back from California we tickets to see the Trans-Siberian Orchestra in Orlando, Florida! I’ve always wanted to see them, but I’ve never had the chance to! This vacation is full of first and new adventures, plus I get to cross some things off from my goals for 2015.

If you look back at that list I have crossed off almost all of my goals for 2015, and I crossing off 2 of my 3 personal traveling goals in December alone (I’m also going to New York City for New Years Eve….Another first!).

Now enough about my traveling plans and onto the recipe for my Roasted Red Pepper Cauliflower Mash! This recipe is almost as easy as instant mashed potatoes, but it tastes a whole heck of a lot better! The recipe has only 4 ingredients and is done from start to finish in under 10 minutes!

Roasted Red Pepper Cauliflower Mash

Prep Time 5 minutes
Cook Time 4 minutes

Ingredients

  • 15 oz package of frozen cauliflower
  • 1/4 cup coconut milk
  • 8 oz roasted red peppers
  • 2 Tablespoons water

Instructions

  • In a microwave safe container, combine frozen cauliflower and 2 tablespoons water. Cover and cook on high for 4 minutes.
  • Place cooked cauliflower into a food processor and pulse until rice like consistency.
  • Add roasted red peppers and coconut milk into the food processor and pulse until smooth.

    This is a great recipe to use when folks don’t want traditional mashed potatoes
