- 15 oz package of frozen cauliflower
- ¼ cup coconut milk
- 8 oz roasted red peppers
- 2 Tablespoons water
In a microwave safe container, combine frozen cauliflower and 2 tablespoons water. Cover and cook on high for 4 minutes.
Place cooked cauliflower into a food processor and pulse until rice like consistency.
Add roasted red peppers and coconut milk into the food processor and pulse until smooth.
