Guilt Free, artificial sweetener free, high protein, low fat, GREAT TASTING cheesecake. Sounds too good to be true right? WRONG!
Do I have your attention now? This recipe is super easy, even kids can make it! Also on another note, this cheesecake was super cheap to make too. I stocked up on cream cheese when Publix had Philadelphia cream cheese on sale 2 for $3 (I freeze it) and Okios greek yogurt are 5 for $6 and I had manufactures coupon for $1 off 2, so I ended up getting the greek yogurts for 75 cents a piece! Enough of that, on to the recipe!
First preheat oven to 250F. In a blender combine:
2 8oz containers of fat free cream cheese,
2 5.3oz containers of fat free plain greek yogurt,
2 large eggs,
1/4 cup plain unsweetened almond milk,
1 Tbsp stevia extract,
3 scoops vanilla Gnarly Whey,
1 Tbsp pure vanilla extract,
1/4 tsp salt.
*Optional* crush/blend 30g of chocolate fiber one cereal for base of cheesecake (contains sucralose)-recipe is artificial sweetener free as New York Style without this base. I used a standard cheesecake pan so cooking times are based on this size. The smaller the pan the longer the cooking time.
Once blended spray a standard cheesecake pan with non-stick spray. Pour cheesecake batter in pan and then place in oven. Cook at 250 for 30min and then cook at 300 for 40 minutes. Cool in refrigerator for 4-5 hours. I made mine at night and then ate a slice for breakfast!
Serves 8. Macros without crust: 9g carbs, 17g protein, 2g fat. Macros with crust: 12g carbs, 17g protein, 2g fat.
Optional toppings are endless: A few I chose were fat free reddi whip (publix brand) with raspberries, fat free reddi whip with dark chocolate chips, fat free plain greek yogurt mixed with stevia extract and cocoa powder.
