Ninja Creami Coffee Protein Ice Cream

I'm not going to lie, I ate this entire pint of ice cream for breakfast. I did not feel guilty one bit!

It's super light and creamy, and it's a fun spin on an affogato! Espresso + ice cream, yes please!

Ever since I made this Ninja Creami coffee ice cream recipe, I've been wanting to experiment with a protein packed version.

I also have an oat milk version in the works too!

You can pretty much add a scoop of unflavored protein powder to any recipe, as long as it's a high quality protein powder. I've noticed the isolates tend to work better, but I haven't tried every brand on the market yet. Depending on the fat content or lack of emulsifiers, you may just have to give it a re-spin or two for the best texture.

Notes

So, a few things about this ice cream.

  1. It's a soft serve texture, if you want more of an ice cream texture, try using casein protein instead or add a little bit of unflavored gelatin or pudding mix.
  2. If you're going to consume this at night and you're caffeine sensitive, try using decaf coffee instead.

Ingredients

  • Double shot of espresso
  • Unflavored whey protein isolate (I used Now Foods, use "LARA" for 20%)
  • Vanilla extract
  • 2% Fairlife Milk
  • Monk Fruit in the Raw

You can use oat milk in this recipe (which works better than almond milk - way less icy), but you will be reducing the protein content of the ice cream.

Tips & Tricks

Be sure to prepare in advance. This recipe takes 18-24 hours to freeze. I like to plan ahead and make it before the weekend. This is when I always want an extra sweet treat.

Tools to make this easy recipe

  • Ninja Blender – I love my ninja blender. Not only can you use it for the obvious, like smoothies and shakes, but it also works perfectly for making the ice cream base!
  • Ninja Creami ice cream maker – I am in love with this Ninja Creami.
  • Ninja Creami Pints - I opted for these pints because they were about half the price, but be weary if you need them quickly; it took about three weeks to get here. They did have some prime options for other pint containers, but I was being thrifty.

How to store

When freezing the ice cream pint, make sure the lid is on secured and it's placed in the freezer on a flat surface.

What to do if you don't eat the entire pint

If you don't eat all of the ice cream in one sitting, make sure to flatten the top of the ice cream, replace the lid and store in the freezer. When you're ready to eat it again you will need to run it on the lite ice cream function, and respin twice.
