Stuffed Turkey Roll Ups

Hot, crisp, and packed full of protein and flavor. These stuffed turkey roll ups are going to become a staple in my weekly meal plans. They're super versatile because you can change the filling each week so you never get bored!

Today I'm totally stepping out of my comfort zone. The only time I every eat turkey is on holidays or if it's on a sub, but today I actually cooked turkey! Well, not a whole turkey because that would have taken hours. I got the all natural "tenderloin" which ended up looking like 2 really big turkey breast.

This recipe, start to finish is done in 48ish minutes (time varies depending on how small of a mess you want to make lol). This recipe was inspired by my childhood where I would eat those stuffed chicken and broccoli roll ups. I honestly have been meaning to make these for a while but I was super intimidated.

Fear not, as long as you aren't afraid to make a mess. These stuffed turkey roll ups are actually super easy to make.

Plus if you're stressed you can take relieve some by whacking a turkey breast with a meat mallet to flatten it out.

I don't know why but there is definitely something therapeutic about hitting something with a mallet. I guess that why people like to hit things with hammers?

Personally, I have found that ironing can be very therapeutic. Except when I have 20 shirts to press and then it becomes more of a headache.

Somewhere in between there is a fine line. Ugh. You see those beautiful green leafy things up there. Yeah the spinach. I definitely need to eat a lot more of that and other vegetables.

My belly is a little upset with me. I ate way too much heavy food this past week (vacation and food wine conference).

I had a blast and I was able to see so many people who I hadn't seen in forever! I took so many pictures (recap post to follow so keep an eye out) and I've already posted a few to Facebook so if we're friends you've already seen a few 🙂

The food was amazing! I never went hungry once. Well I take that back, one of the sessions went a little over so we had to switch lunch with another session so that is the only time in the 3 days that I was even remotely hungry.

I was never hungry when I woke up either and that's a rarity! I'm always hungry when I wake up!

The speakers and the sessions were amazing was always! I learned so much! Also I never knew how much goes into food styling. And fake ice cream! That's a real thing!!

Ingredients
  

  • 2 large turkey breast
  • ⅔ cup part skin ricotta cheese
  • ¼ cup egg whites
  • ⅔ cup Italian bread crumbs
  • ¼ shredded mozzarella cheese
  • 2 cups baby spinach
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • basil for garnish

Instructions
 

  • Pre-heat oven to 450F
  • Slice turkey breast in half long ways (butterfly)
  • Flatten out turkey breasts so they increase in surface area
  • Filling: on medium heat add olive oil, garlic and spinach.
  • In a bowl combine spinach mixture, ricotta, and half of the mozzarella cheese. Set aside.
  • In a bowl place egg whites. Place bread crumbs on a plate.
  • In a large baking dish, coat lightly with oil or spray.
  • Take one turkey breast. Lay it out flat and put a quarter of the spinach mixture close to the edge of the turkey (not in the middle). Roll up the turkey making sure that all edges a tight.
  • Very carefully dip rolled up turkey breast into the egg whites, making sure to coat completely.
  • Again very carefully roll the turkey roll up into the bread crumbs and coat completely.
  • Place turkey breast in the oiled baking dish seam down. Repeat for 3 other turkey breasts.
  • Bake for 25 minutes. Take dish out of oven and top with remaining mozzarella cheese.
  • Cook for 3 minutes or until cheese is melted.
  • Top with fresh basil.

Now don't fret. It may look super hard but it's not. It's actually a little more annoying than hard.

Well at least it was for me because I had to was my hands between each step so I could take a picture to share. So the 20 minute prep time is probably a little bit less. I like to err on the side of caution.

So just like that, you now have a simple recipe that you can make for any occasion. Turkey doesn't have to be just for holidays and sandwiches anymore!

    my bf and I make stuffed chicken and other roll up ideas all the time but we have yet to do turkey! this is a great recipe to try for our first turkey attempt - not too hard or time intensive. thank you!
