Low Carb Egg Cups

Are you trying to reduce the amount of carbohydrates in your diet, but still want to eat tasty and satisfying meals? Then these Low Carb Egg Cups are perfect for you! They are high in protein, low in carbohydrates and are packed full of vitamins and minerals to help you reach your daily goals. There are so many varieties that you can make so you will never get bored! You can add spinach, bell peppers, onions, feta, cheddar, salt, pepper, the toppings are endless. You can also substitute 6 of the eggs for 1 ½ cups of egg whites for a lighter fare.

These are so simple to make and perfect for meal prepping. I tend to make most of my breakfast, lunch and snacks for the week ahead of time and then have a different dinner each night of the week. This saves me a bunch of time in the kitchen and allows me to have healthy foods on hand so I don't have to be at the mercy of fast food.

First Pre-heat your oven to 350F. I sprayed my Muffin Pan with non-stick spray and then lined each cup with 1 slice of ham.

Next I cracked an egg into each one of the holes and then topped with about a tablespoon of diced sweet onion.

Next I added about a tablespoon of 2% shredded cheese on top and then sprinkled with Italian seasoning.

Next place in the oven and cook for 20 minutes.

And Viola!

They pop out so easily and the yolks are cooked perfectly!

I store my eggs n BPA free containers and then re-heat them up on glass or paper plates. They only need to cook for 30 seconds, any longer tends to start burning the ham 🙁 And don't be afraid if you start to hear a popping noise while they are heating up in the microwave, it's a sign that they are almost ready LOL.

    Love the breakfast recipe! I usually try to pre-cook all my meals once a week, then store them in the freezer... my favorite quick snack is  Grissini Breadsticks with sea salt.. a great low-carb snack!

    Those look yummy and they are low carb.  When I have time to prep meals, I like to make chicken enchilada soup and freeze it.
