So I'm kind of obsessed with Trader Joe's cookie butter. A little over a year ago I had never been inside of a Trader Joe's and had only heard about cookie butter in passing. Some days I wish I had never heard about it because then I could have saved myself thousands of calories (yes thousands, I've eaten that much cookie butter!), but hey you only live once and this stuff is just that good! Besides cookie butter being now one of my favorite foods, a few of my other favorite foods are dark chocolate (duh!) and bananas. So I decided to whip up these Cookie Butter Stuffed Dark Chocolate Covered Bananas as a healthy treat!

Let me introduce you to my favorite chocolate-covered bananas.

Cookie Butter Stuffed Dark Chocolate Covered Bananas

This is a super easy recipe for you to make for your sweetheart for Valentine's day, or if your like me any day of the week! These banana pops also pass up for kids' healthy snacks for Easter treats. Or just a sweet treat on a warm summer day.

If I eat a few too many I like to rationalize things out. The chocolate is high in antioxidants which neutralize free radicals and the bananas are packed full of vitamins and minerals so it's a well-balanced snack right?

I mean, who doesn't love a little chocolate? Here are some tricks to choosing a fresh banana (and avoiding overripe bananas!):

  • Look for bananas that are ripe but still firm.
  • Choose bananas that are a vibrant golden-yellow color. Avoid bananas with green tips, as they may not be ripe enough. This packs the decadent flavors of real banana slices.
  • Avoid bananas that are overly brown or have dark spots, as they may be too ripe and mushy.
  • Choose bananas with smooth skins and minimal blemishes. While small imperfections like little brown spots are normal, avoid bananas with large bruises or cuts, as they can affect the appearance and taste of the final product.
  • Select bananas that are medium to large. They should be large enough to make dipping them in chocolate and in a variety of toppings easy, but not so large that they become difficult to handle.

I try to eat everything in moderation, but If I know I want to have a few of these after work or as a bed time snack, I make sure to go a little lighter throughout the day on my calories because although these taste delicious they are not your best friend if you are trying to watch your weight!

If I crave this on busier days, I like chilling the dessert during the day. Frozen banana tastes soo much better! You can customize the presentation of the banana to make it more appealing. You can use a popsicle stick to stick in the little banana bites or just present them on a large plate, enjoying the chocolate shell.

Do you see that gorgeous picture up there? Yep, those two heavenly jars of cookie butter, they are sitting at my partner in crime's house aka Erica from The Crumby Cupcake.  I can't keep them in my house any more because I eat them too quickly. They are that good! No trip to the grocery store is complete without getting these sweet tooth cravings.

The natural sweetness of the banana piece and melted chocolate just packs the right punch makes it easy to enjoy rich flavors of chocolate anytime of the day for me in a healthier way. What's better than chocolate-covered banana bites?

She actually took all of these pictures because the pictures were actually taken before I got my DSLR and her photos are amazing and I learn something new from her every day (not just about blogging or photography either!).

We're actually going on vacation together in exactly 1 week and the boys are coming along too! We're going to Savannah, Georgia; Charleston, South Carolina; and Banner Elk, North Carolina. I'm so glad that she and our SOs have the traveling and foodie bug just like us! It makes for an amazing vacation!

This chocolate covered banana bites is a no-fuss dessert. Microwave chocolate chips, melt chocolate, chocolate melts, slices of real banana meet... voila!

Cookie Butter Stuffed Dark Chocolate Covered Bananas

Ingredients
  

  • Ghirardelli Dark Chocolate Chips
  • Banana
  • Trader Joe's cookie butter

Instructions
 

  • Slice bananas into ½ inch slices
  • Line half of the banana slices on a plate or parchment paper
  • Top the banana slices with a ½ tablespoon of Cookie Butter
  • Place the other half of the banana on top
  • Freeze the banana for about 15 minutes in a freezer-safe bag (can omit this step but frozen banana slices stay together better for coating with chocolate)
  • Place dark chocolate chips in a microwave save dish and melt at 15 second intervals and stirring in between as to not burn the dark chocolate. Remember to melt chocolate, not overcook.
  • Remove bananas from freezer and place a tooth pick through each banana stack
  • Dip banana stack evenly in dark chocolate and place on parchment paper/wax paper (or baking sheet!) to harden (They will harden up quicker if the bananas were frozen!)
  • You can use your favorite toppings in moderation to make the bananas more up your alley! Sprinkle toppings in healthy doses.
  • Leftovers? Store the chocolate-covered banana bites in an airtight container before popping it on the fridge.

    I love Trader Joe's too and wish I had never found it! Have you had the Cookie Butter Cheesecake? Holy hannah that stuff is GOOD!!! These bananas look delish and they totally make cookie butter healthy!

    Hahaha cookie butter is something my sister in law LOVES. We took her a jar in Nov 2014 and she fell in love. She's in England!!! I already have a request for cookie butter for our England vacation this year!

    This is such a great treat idea. I know that dark chocolate is better for you than regular chocolate and coupled with bananas, that is a guilt-free dessert.

    Yummy! There is nothing can go wrong when fruit dip in melted chocolate. A good treat for family, but can also be perfect for Valentine treat for two.
