A Sunshine Kiwi Smoothie Bowl, can brighten up any day.  The light and refreshing smoothie bowl is packed full of kiwis, blueberries, peaches, chia seeds and coconut chips. This recipe is great because it is not just healthy, but vegan and gluten free!

Vegan Smoothie Bowl with leftover fruit

Do you ever have those days where you really have nothing left in the house, but a bunch of stuff in your freezer and a few pieces of fresh fruit? Those days have been plentiful for me because I’ve been super busy with work and getting everything planned for vacation.

Don’t worry, I’ve got you covered. Even though I’m lacking a bunch of fresh ingredients, I don’t let it stop me from making healthy creations.

A smoothie bowl is the best choice when you are short on ingredients and time. In under fifteen minutes, you have a healthy snack packed with vitamins and protein.

How to make a kiwi blueberry smoothie bowl

  1. First pick your base, whether it be fresh or frozen fruit.
  2. Then pick your liquid (milk, almond milk, coconut milk, oat milk, water, etc)
  3. Your thickeners (ice, flax seeds whole or ground, chia seeds, frozen fruit)
  4. Toppings (coconut flakes or chips, fresh fruit, cacao nibs, etc)

  • Kiwi
  • Blueberries
  • Plum
  • Strawberries
  • Peach
  • Coconut milk
  • Ice
  • Chia Seeds
  • Coconut Chips

Kiwi Nutrition

If you thought that lemons and oranges were the highest sources of Vitamin C, think again! According to the nutritional break-up of kiwi fruit, per 100 grams contain 154 percentage of Vitamin C, which is almost twice that of lemons and oranges.  This exotic fruit is also loaded with dietary fiber, which helps make you feel full longer, and staves off cravings.

This kiwi smoothie bowl is light and refreshing! Bursting with flavor and packed full of vitamins and protein!

Ingredients

  • 1 cup ice
  • 1/2 cup frozen blueberries
  • 1/2 plum sliced
  • 1 cup frozen strawberries
  • 1/2 cup unsweetened coconut milk
  • 2 tablespoons chia seeds
  • 1/4 cup fresh blueberries
  • 1/2 fresh peach
  • 1 Kiwi fruit
  • 1 tablespoon coconut chips

Instructions

  • In a blender combine the ice, frozen blueberries, plum, frozen strawberries, coconut milk and half of the chia seeds.
  • Once blended, pour mixture into a bowl and top with remaining ingredients.

    I love smoothie bowls…especially in the summer! This one is especially beautiful! Your trip sounds amazing…we did Portland to Sonoma and traveled down the coast and it was beautiful! I want to go back and do Crater Lake. I can’t wait to hear about your trip when you get back!
