Do you ever have those days where you really have nothing left in the house, but a bunch of stuff in your freezer and a few pieces of fresh fruit? Those days have been plentiful for me because I've been super busy with work and getting everything planned for vacation.

How to make a kiwi blueberry smoothie bowl
- First pick your base, whether it be fresh or frozen fruit.
- Then pick your liquid (milk, almond milk, coconut milk, oat milk, water, etc)
- Your thickeners (ice, flax seeds whole or ground, chia seeds, frozen fruit)
- Toppings (coconut flakes or chips, fresh fruit, cacao nibs, etc)

Sunshine Kiwi Smoothie Bowl {Vegan and Gluten-Free}
Ingredients
- 1 cup ice
- ½ cup frozen blueberries
- ½ plum sliced
- 1 cup frozen strawberries
- ½ cup unsweetened coconut milk
- 2 tablespoons chia seeds
- ¼ cup fresh blueberries
- ½ fresh peach
- 1 Kiwi fruit
- 1 tablespoon coconut chips
Instructions
- In a blender combine the ice, frozen blueberries, plum, frozen strawberries, coconut milk and half of the chia seeds.
- Once blended, pour mixture into a bowl and top with remaining ingredients.
