Brighten up those rainy days with this Sunshine Kiwi Smoothie Bowl. This light and refreshing smoothie bowl is packed full of kiwis, blueberries, peaches, chia seeds and coconut chips. Also I’ve created a video tutorial on how to make a smoothie bowl which I hope you enjoy!
Do you ever have those days where you really have nothing left in the house, but a bunch of stuff in your freezer and a few pieces of fresh fruit? Those days have been plentiful for me because I’ve been super busy with work and getting everything planned for vacation. Don’t worry, I’ve got you covered. Even though I’m lacking a bunch of fresh ingredients I don’t let it stop me from making healthy creations.
I honestly can’t believe we are going to the west coast in less than a month!! It doesn’t even seem real yet. I haven’t been freaking out…not just yet. We’ve really been enjoying the planning process (wine & searching through amazing Airbnb’s), but we realized that we should have booked our lodgings a few months ago. A lot of the places we really wanted to stay at are all booked up but we are making the best of it! We’ve even thrown in one night in Vegas 🙂

Sunshine Kiwi Smoothie Bowl {Vegan & Gluten-Free}
Yields 1 large smoothie bowl

Ingredients
- 1 cup ice
- 1/2 cup frozen blueberries
- 1/2 plum sliced
- 1 cup frozen strawberries
- ~1/2 cup unsweetened coconut milk
- 2 tablespoons chia seeds
- 1/4 cup fresh blueberries
- 1/2 fresh peach
- 1 SunGold Zespri Kiwifruit
- 1 tablespoon coconut chips
Instructions
- In a blender combine the ice, frozen blueberries, plum, frozen strawberries, coconut milk and half of the chia seeds.
- Once blended, pour mixture into a bowl and top with remaining ingredients.

I must confess, before entering this recipe contest I had never heard of SunGold Zespri Kiwifruit. Now that I’ve had the chance to try it, I absolutely love it! If you’ve never heard of Zespri Kiwifruit, let me give you a little run down.
SunGold Kiwifruits are a mix between gold varieties of kiwifruit. They are naturally high in vitamin C and all Zespri kiwifruit are non-GMO. They have a smooth hairless skin, and are yellow in the inside versus the typical green.
One serving (2 kiwifruit) of SunGold provides three times more vitamin C than an orange and as much potassium as a medium banana. SunGold is a good source of antioxidant vitamin E.
