Cauliflower Rice Spring Rolls

Do you love spring rolls, but hate plain old white rice? I've got you covered then with these Cauliflower Rice Spring Rolls.

I have to admit this was my first time ever attempting to make spring rolls. I saw so many food bloggers making spring and summer rolls that I had to jump on the train...but with a twist!

I'm not a huge fan of white rice. For starches I prefer sweet potatoes, quinoa, and brown rice...ya know something with a little fiber, flavor and substance.

White rice is just blahhhh. It's bland and uninspiring. So I decided to change things up a bit.

What is cauliflower rice?

Have you ever heard of cauliflower rice? If you would have asked me a few years ago the answer would have been no. I used to hate cauliflower with a passion. When raw, it's this bitter and hard vegetable that needs to be dunked or coated in something delicious like this damson chutney for me to eat it.

Don't kid yourself; you know what I'm talking about. You're just like me and the only way you'll eat cauliflower is if it's dipped in ranch or cover with cheese right?

Well I'm got some mind-blowing new for you! You can stop dreading cauliflower and take out a plate and silverware because you're gonna want to eat this!

It looks heavenly right? That's why I wrapped that flimsy white fabric around it to accentuate its appeal. In all seriousness. It doesn't look exactly like white rice or taste like it (it tastes better!), but it does make a handy substitute for white rice and not only for in this recipe either might I add.

I've made a super tasty, Chinese-inspired dish with cauliflower rice as well.

These cauliflower rice spring rolls are sooooo easy to make even your kids could make them (after the food is chopped/processed of course!)

First, you need to dice or food process the red cabbage and sweet potatoes!

Next, you need to "rice"  your cauliflower. You can use either fresh or frozen cauliflower. I had frozen cauliflower on hand because it was on sale at Publix for super cheap.

Cook it in the microwave according to the packaging, and once steamed, drain the water and pop those bad boys into the food processor and process away

Scoop out your cauliflower "rice" and add Braggs Aminos or Coconut aminos. Mix well.

Next, you need to find the biggest bowl in your house and fill it a couple of inches with warm water (this is for the rice paper).

Let soak for 5 ish seconds until the rice paper has softened. Place the rice paper on a cutting board, plastic if you have it. I made the wrong decision at first to put it on parchment paper and it ended up sticking pretty bad.

Take a few tablespoons of each ingredient, plop it on the rice paper and roll it up pretending you are rolling up a burrito.

Ingredients
  

  • Rice paper
  • 1 sweet potato shredded
  • 1 cup red cabbage chopped or shred
  • 12 oz frozen cauliflower
  • ¼ cup Moores Zesty Garden Herb Marinade

Instructions
 

  • Separately, in a food processor shred sweet potato and red cabbage
  • Cook frozen cauliflower in microwave according to package
  • Drain cooked cauliflower
  • Place cooked cauliflower in food process
  • Place 1 ½ cups of "riced" cauliflower into a bowl and add ¼ cup of marinade. Mix well.
  • Fill a large bowl a couple inches high with warm water.
  • Take a rice paper and place in warm water for ~ 5 seconds until softened.
  • Place rice paper on a flat surface/cutting board and add a few tablespoons of riced cauliflower, shredded sweet potatoes, and shredded red cabbage.
  • Roll up rice paper pretending it is a burrito.
  • Serve with peanut or sweet thai chili sauce
