Blueberry Pecan Protein Bars

You can probably tell another theme of mine. I love homemade protein bars. If you are looking for the perfect grab and go breakfast idea you’ve found it! These are also a great healthy snack to have between meals. I’m happy to share my blueberry pecan protein bar recipe with you 🙂

Ingredients:

  • 2/3 cup egg whites,
  • 6 Scoops Gnarly Whey (or 3 scoops protein powder with ~25g per serving)
  • 3 medium bananas,
  • 2 Tbsp ground flax seeds,
  • 2 Tbsp almond flour/meal,
  • 1 teaspoon vanilla extract,
  • 1 teaspoon baking powder,
  • 15 drops liquid stevia,
  • a pinch of salt.
  • 6 pecan halves
  • 1/2 cup blueberries

Pre-heat oven to 375F. Combine all but the last 2 ingredients in a blender and blend. Next pour the mixture into sprayed baking tin. Top with 6 pecan halves and 1/2 cup blueberries. Bake for 15-17 minutes or until golden brown. The recipe serves 4. Macros per serving. 276 calories, 25.6g Protein, 32.9g Carb, 7.8g fiber, 6.2g Fat.

    These look so delicious and they’re healthy?! I’ve pinned this to try later. I love protein bars, but ever since I went on a detox diet and try to avoid sugar most days, I’ve had to rethink the protein bar. This one I can actual eat and enjoy!

      The Gnarly whey is made with stevia so you don’t have to worry about adding sugar. I hope you enjoy them!

    these look good! I don’t see the whey powder in the ingredients list… How much do you put in?

      I’m so sorry, I left it out on accident! 3 servings of whey with ~25g per serving. I love Gnarly whey but their scoops are baby scoops so 2 of their scoops is the equivalent to 1 normal size serving. I hope this helps!

    I never thought to make my own protein bars… I have been trying to find delicious ways to up my protein level – and this looks like a delicious way. I’m personally not fond of Pecans, Can you taste them? Or can you omit them? If Omitted, then do you know roughly how it changes the Protein/fat/etc ratio?

      You can omit them them or exchange them for a different type of nut. The pecans are almost all fat, if I remember correctly they are about 10 calories each (1 gram of fat and like 0.25g protein). I break mine into small pieces. If you don’t buy the roasted ones, or don’t roast yours before you put them in the bars the flavor should be more mild.
