Air Fryer Roasted Tomatoes

You’ll love these air fryer roasted tomatoes. They’re a quick and easy snack or side dish to your favorite Mediterranean style meal.

You can make these air fryer roasted tomatoes either super juicy and bursting with flavor, or you can cook the a little longer and make the intense flavor even more concentrated. When you cook the tomatoes for less time they make as a great lower carb side dish and when they’re cooked longer they’re perfect for toppings on salads, sandwiches and pizza!

Ingredients

tomatoes, olive oil, pepper, salt and garlic on a grey surface
  • Campari tomatoes
  • olive oil or avocado oil
  • kosher salt
  • black pepper
  • fresh garlic, minced
  • Optional – balsamic glaze and fresh basil

How to make roasted tomatoes in an air fryer

  1. First wash the tomatoes and then transfer them to a cutting board.
  2. Then cut the tomatoes in half.
  3. Place the tomatoes in a bowl along with the olive oil, salt, pepper and garlic.
  4. Mix until tomatoes are evenly coated.
  5. Transfer the tomato halves to the air fryer basket.
  6. Set temperature to 400F. For juicy tomatoes set the timer to 15 minutes and for more dehydrated tomatoes (almost sun dried tomato consistency) cook for 20-25 minutes.
  7. Carefully remove from air fryer basket and optionally top with fresh basil and balsamic glaze.
