I’m clinging onto Fall with these tasty Fall inspired Pumpkin Energy Bites. They’re slightly sweet and packed full of spice. They’re perfect for snacking or use them as a topping on your oatmeal or smoothie bowl.
TGIF!!! And I really mean it! This week has been absolutely INSANE! Work life + blog life + social life + Thanksgiving = 1 stressed woman.
I hope you had an amazing Thanksgiving! I went over to my parent’s house for a nice quiet Thanksgiving dinner. It was just the fam and I didn’t have to cook anything…I just brought wine LOL.
Sometimes A lot of the times after a day full of cooking/videoing, I’m just too tired to cook anything else and I just end up eating cereal or a PB&J sandwich for dinner. Does this sound like you too?
On another note, I was so proud of myself. I ran 2.5 miles on Saturday, ran/walk 3.5 miles on Sunday, I lifted weights and did cardio on Tuesday and then I power walked ~4 miles (including 2 bridges) on Thanksgiving morning. And believe it or not, I was most sore after the power walk session LOL. I guess I used a bunch of muscles that I don’t normally use. I’m finally kicking my butt into high gear for this Disney half marathon. I’ll definitely be able to finish it, but with the way things are looking it’ll be more of a run/walk race, but at least I’m out there moving!

Since I’ve been so busy this week, I haven’t had the time to run to the grocery store and plus with it being Thanksgiving week I didn’t want to go near one. Lucky for me I have a Dollar General on my way home and I was able to pick up a few essentials to get me through the week. PLUS I was in luck, my pumpkin was on sale so I had to stock up! What’s EVEN better, Dollar General has some online coupons (good through 12/14/16) that I was able to use as well.
Pumpkin Energy Bites
- 1 cup canned pumpkin
- 8 pitted dates
- 1/4 cup coconut flour
- 1 tsp cinnamon
- 1 tsp ground cloves
- 1 tsp nutmeg
- 1/4 Nescafe Taster's Choice Coffee
- In a food processor blend dates.
- Add canned pumpkin and dry ingredients.
- Blend until combined.
- Optional-refridgerate for 15 minutes for ease of making.
- Form into balls.
- Optional: Spread out chocolate chips and coconut flakes and roll pumpkin energy bites over toppings.
- Refrigerate remaining bites.
I’ve been trying my hardest, but it’s kind of hard to shoot a video by yourself but I think these pumpkin energy bites turned out pretty good except for a little shaking when my mini food processor was working its magic LOL.
