If you're looking for a lite chocolate ice cream that has protein, you'll love this Ninja Creami Chocolate Ice Cream with cottage cheese. Enjoy the rich chocolate flavor without the added fat or carbs!

If you've seen people adding cottage cheese to their ice cream recipes, you might be wondering why? Besides being a way to add protein to your ice cream without using powders or protein shakes, it also gives a creamy texture to an otherwise low fat ice cream.

This ice cream uses almond milk for it's liquid, so it's a very low fat ice cream base, so the cottage cheese helps to make it creamy without having to add any gums or pudding mixes.

If you're looking for a high protein, low net carb and low fat ice cream, this one is for you!

  • cottage cheese
  • unsweetened vanilla almond milk
  • unsweetened cocoa powder
  • collagen peptides
  • monk fruit or your favorite sweetener
  • vanilla extract

Tools to make this Ninja Creami Recipe

  • Ninja Creami ice cream maker – I am in love with this Ninja Creami. 
  • Ninja Creami Pints – I opted for these pints because they were about half the price, but be weary if you need them quickly; it took about three weeks to get here. They did have some prime options for other pint containers, but I was being thrifty.
  • Ninja Blender – I love my ninja blender. Not only can you use it for the obvious, like smoothies and shakes, but it also works perfectly for making the ice cream base!

How to make chocolate ice cream with cottage cheese in the Ninja Creami

  1. Add all of the ingredients to a blender, and blend until smooth. It's okay if some of the cottage cheese doesn't completely blend. It won't be clumpy after it's spun in the Creami.
  2. Transfer the liquid to a pint and place the lid on securely and transfer to the freezer. Freeze for 24 hours.
  3. After 24 hours, remove the lid and place the pint into the pint holder. Place the lid with the blade on top and lock into place.
  4. Run the Ninja Creami on the lite ice cream function. You will need to re-spin it 2 times for the best texture. Tip, if you continue to get a powdery consistency's try adding in a tablespoon of liquid with the re-spins.
  5. Optionally, top with sprinkles or your favorite ice cream toppings and enjoy!

Substitutions

If you want to make this even higher in protein, substitute the almond milk with skim milk. To make this a more decadent version, use half and half or cream instead of almond milk.

How to store

Store your chocolate cottage cheese ice cream in the freezer with the lid on. It should last 3 to 6 months in the freezer.

Didn’t finish all of your pint in one sitting? Simply smooth out the ice cream to make it level, place the lid on, and store it in the freezer. When you’re ready to eat your ice cream, you’ll need to select the lite ice cream function again to make it nice and creamy and ready to eat. You may need to re-spin it a few times to get the perfect texture.
