Keto Cauliflower Soup with Bacon

You won’t even be able to tell that this cauliflower cheese soup is low in carbs! Per serving this keto soup recipe has just 9g total carbs and 7g net carbs.

Ingredients

  • Fresh cauliflower: you can either chop a head of cauliflower into florets, or if you want to save time you can grab a large bag of cauliflower florets
  • Olive Oil or avocado oil
  • Bacon
  • Yellow Onion 
  • Chicken broth, Chicken Stock or Chicken Bone Broth
  • Heavy whipping cream
  • Cheddar cheese: I prefer getting a block of cheddar cheese and then shredding it myself. The freshly shredded cheese melts so much better then bagged shredded cheese.
  • Seasonings: Salt, pepper, fresh garlic
  • Toppings: shredded cheese, crumbled bacon, sliced scallions or fresh chives

Tips & Tricks 

If you don’t want to chop up a head of cauliflower you can buy pre-cut cauliflower.

Looking to increase the protein in this keto soup recipe? Use chicken bone broth instead of regular broth or stock.

Want to lower the carbs? Omit the onion in this recipe to reduce the carbohydrates.

How to make this easy Creamy Keto Cauliflower Soup

  • Preheat the oven to 400°F.
  • On a large rimmed baking sheet, toss the cauliflower with the olive oil and season with salt and pepper. Bake for 25 to 30 minutes or until slightly browned.
  • While the cauliflower roasts, in a large saucepan over medium heat, cook the bacon for 5 to 7 minutes until crispy. Transfer the bacon to a paper towel–lined plate to drain; leave the bacon fat in the pan.
  • Return the pan to medium heat and add the onion and garlic. Stir well to combine and sauté for 5 to 7 minutes until the onion is so ened and translucent. Season with salt and pepper.
  • Remove the cauliflower from the oven and add it to the pan with the onion and garlic. Stir in the broth and bring the liquid to a simmer. Reduce the heat to low. Cook for 5 to 7 minutes. Remove from the heat. With an immersion blender, carefully blend the soup. Alternatively, transfer the soup to a regular blender (working in batches if necessary), blend until smooth, and return the soup to the pan.
  • Stir in the cream. You may need to add a bit more broth or cream, depending on how thick you like your soup. Add the Cheddar and stir until melted and combined. Spoon the soup into bowls and top with bacon and more Cheddar. Garnish with scallion.

How to store

Store leftovers in an airtight glass container for up to 5 days. Make sure to let it come to room temperature before storing it in the fridge.

You can freeze this soup for up to 3 months

How to reheat

Transfer desired amount of soup to a bowl. Cover the bowl with a paper towel and microwave for 1.5-2 minutes. Alternatively you can warm this up on the stove top in a saucepan.

Substitutions

If you want to make this a cauliflower soup without cream, you can substitute the heavy cream for coconut milk.

Winter is coming! This low carb keto bacon cheddar cauliflower soup recipe is just what you need to stay warm this winter.

Ingredients

  • 1 head cauliflower chopped into florets

    Love the flavoring in this. It’s one way I can Enjoy cauliflower and I’m huge about the creamy/cheesiness. Something my husband & I both can enjoy as the weather turns a little chilly.

    I’ve been meaning to make cauliflower soup for a while but always worry it might lack flavor, but the added bacon and cheese are sure to do the trick here. Yum!
