Gluten Free Chocolate Chip Cookies with Coconut Flour & Oats

Soft, chewy, cookies with melt in your mouth dark chocolate morsels…do I have your attention yet? These Gluten Free Coconut Dark Chocolate Chip Cookies are just what your body desires. It doesn’t matter if you’re not Gluten intolerant or have a Gluten Allergy/Sensitivity, you can still enjoy theses delicious cookies.

You may have noticed my trend with gluten-free baked goods, this is not because I believe in following a gluten-free diet (I believe you should only follow a gluten-free diet if it is medically necessary), but because another one of my friends was diagnosed with a wheat allergy.

Gluten Fee Coconut Dark Chocolate Chip Cookies

It has been fun looking for recipes that I want to modify and make gluten free. I find something that I want to use as a base and then add ingredients here and remove some there, and these bad boys came out perfect! A lot of the time when I have bought gluten free products at a super markets they tend to be missing something. Whether the texture is wrong or they don’t taste the best, I don’t know but there is always something off about them, but not these cookies. These taste just like chewy oatmeal chocolate chips cookies with a hint of coconut!

It doesn’t matter if you’re not Gluten intolerant or have a Gluten Allergy/Sensitivity, you can still enjoy theses delicious cookies.

You may ask me, why are you buying Gluten Free products if you are not Gluten Intolerant or have a Gluten Sensitivity? Well the answer is simple, I do not recommend products that I do not try and like myself. I hate wasting money, especially on food, so if I can save someone else money by recommending a better tasting product I will.

Gluten Free Dark Chocolate Chip Cookies

I usually by ingredients in bulk to save money. I'm so happy Sam's has been getting more organic products. I try to by organic whenever possible, if there is not too much of a price difference. Also other foods that are best to buy organic are those that you eat the skin (peaches, apples, grapes, tomatoes etc) and spinach and lettuces). I am lucky enough that my parents live close by and that I can grab some organic hydroponic lettuce, spinach, strawberries, tomatoes, beets, and chives whenever I run out (depending on whether or not they are in season).

Gluten Free Coconut Dark Chocolate Chip Cookies

Ingredients
  

  • 3 large eggs
  • ¼ cup Truvia Brown Sugar Baking Blend
  • ¼ cup Organic Coconut Sugar
  • 1 cup Gluten Free Oats not instant
  • ¼ Cup Organic Coconut Flour
  • ½ cup Organic Coconut Oil melted
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • a pinch of Himalayan sea salt
  • ½ teaspoon xanthan gum
  • 1 tablespoon pure vanilla extract
  • ¾ cup dark chocolate chips
  • ½ cup Organic Unsweetened Coconut Flakes

Instructions
 

  • In a medium bowl combine oats, coconut flour, cinnamon, baking powder, xanthan gum and salt. Set aside.
  • In a large bowl or mixer combine eggs, oil, sugars, and vanilla extract.
  • Next slowly add in dry ingredients.
  • Stir in chocolate chips and coconut flakes.
  • Line cookie sheets with parchment paper.
  • With a cookie scoop or two spoons (I have mastered this since I do not have a cookie scoop), spoon out dough onto lined cookie sheets about 1 ½ to 2 inches about.
  • Freeze dough for 1.5 hours or refrigerate for 4 to 5 hours (this is so the coconut oil does not spread).
  • Pre-heat oven to 350 degrees.
  • Remove cookie sheets from freezer.
  • Bake for 15 minutes.
  • Recipe makes 2 dozen cookies.
  • Let cool and enjoy!

    I saw coconut flour for the first time at Sams a few weeks ago. Do you just use it like normal white flour?

      Oh no definitely not. Read my coconut flour pineapple upside down crumb cake recipe from last week. I explained how I mastered altering recipes with with and my disastrous failed recipes LOL. Basically add egg and xanthan gum (for binder because of no gluten) and reduce coconut flour because it is high fiber and very absorbent. I hope this helps!

          You should be able to. Maybe just add another egg yolk. It's used to act like gluten add to keep the cookie together.

    I'm not the biggest fan of coconuts, however this looks really good. I know it's something I can make and the kids wouldn't touch, so there's a better chance of actually getting some. I will have to pin it to try later, now I'm hungry at 1am lol.

      It's the pink sea salt. I haven't seen it at our local grocery stores, but I actually found one at marshall's!

    Thanks for linking my recipe. I've had disastrous results using coconut flour as well. I find Pamela's baking mix and Better Batter are good substitutes for regular wheat flour.

    Love a good chocolate chip cookie! I haven't ever tried a gluten free one before but after reading the list of ingredients I have to admit it sounds delicious. Will have to see if I can find all of those ingredients at our local grocery store.

      Some Gluten-Free recipes taste better than the originals! Just read the ingredients list first to make sure it's not full of crap. You should be able to find everything at your local grocery store except for maybe the xanthan gum.
