In a medium bowl combine oats, coconut flour, cinnamon, baking powder, xanthan gum and salt. Set aside.
In a large bowl or mixer combine eggs, oil, sugars, and vanilla extract.
Next slowly add in dry ingredients.
Stir in chocolate chips and coconut flakes.
Line cookie sheets with parchment paper.
With a cookie scoop or two spoons (I have mastered this since I do not have a cookie scoop), spoon out dough onto lined cookie sheets about 1 ½ to 2 inches about.
Freeze dough for 1.5 hours or refrigerate for 4 to 5 hours (this is so the coconut oil does not spread).
Pre-heat oven to 350 degrees.
Remove cookie sheets from freezer.
Bake for 15 minutes.
Recipe makes 2 dozen cookies.
