  • Unsweetened canned coconut milk (shake can before pouring)
  • Chopped/cubed mango
  • Vanilla extract
  • Monk Fruit In The Raw
  • A pinch of salt (optional)

This recipe is made using the Ninja Creami ice cream maker. Below are links to where you can purchase them.

  • Ninja Blender – I love my ninja blender. Not only can you use it for the obvious, like smoothies and shakes, but it also works perfectly for making the ice cream base!
  • Ninja Creami ice cream maker – I am in love with this Ninja Creami. 
  • Ninja Creami Pints - I opted for these pints because they were about half the price but be weary if you need them quickly; it took about three weeks to get here. They did have some prime options for other pint containers, but I was being thrifty.

How to make Mango Ice Cream with your Ninja Creami

Follow this step by step guide for making this recipe.

  1. Mix the base. Add all ingredients to a blender. Blend until smooth.
  2. Freeze the mixture. Next, transfer the mixture into the Ninja Creami pint and place the lid on. Transfer the pint to the freezer and freeze for at least 24 hours.
  3. Spin It in the Ninja Creami. After 24 hours, remove the lid and place the pint into the pint holder. Place the lid with the blade on top and lock it into place. Run the Ninja Creami on the lite ice cream function.
  4. Adjust as Needed: After the first spin, the texture will be crumbly. This recipe needs 2 re-spins for the best texture. Repeat this step until the ice cream reaches a perfectly creamy consistency.
  5. Serve and Enjoy: Scoop the ice cream into a bowl or enjoy it straight from the container. For a little extra flair, you can top it with your preferred toppings.

Optional Mix-ins & Toppings

Add a little more flavor to this recipe by adding any of the following:

  • Fresh mango
  • Whipped coconut cream
Add all ingredients and blend
Freeze for at least 24 hours
Place in the pint holder
Run on the lite ice cream function
Scoop in a bowl and add desired toppings.

Substitutions

Below are some easy swaps for this recipe.

  • No coconut milk? Use oat milk, almond milk, or cashew milk for a different flavor.

How to store

When freezing the ice cream pint, make sure the lid is secured, and it's placed in the freezer on a flat surface.

If you don't eat all of the ice cream in one sitting, make sure to flatten the top of the ice cream, replace the lid, and store it in the freezer. When you're ready to eat it again, you will need to run it on the ice cream or lite ice cream function for two spins.

Ingredients

Instructions
 

  • Add all ingredients to a blender. Blend until smooth.
  • Next, transfer the mixture into the Ninja Creami pint and place the lid on.
  • Transfer the pint to the freezer and freeze for at least 24 hours.
  • After 24 hours, remove the lid and place the pint into the pint holder. Place the lid with the blade on top and lock it into place. Run the Ninja Creami on the lite ice cream function. Re-spin once.
  • Enjoy!
