Strawberry Banana Protein Bars

Do you have ripe fruit sitting in your fridge about to go to waste? If so these Strawberry Banana protein bars are perfect for you! Moist and flavorful bars that are great for breakfast or an on the go snack!

Strawberry Banana Protein Bars

I like variety and I like easy to grab breakfast foods. Most days I eat my breakfast in my car on the way to work, because the earlier I get there the earlier I get to leave LOL. Convenient easy to grab foods shouldn't make you sacrifice flavor or health, and that's where these bars come in. They're high in fiber, protein, vitamins and minerals.

Ingredients:

  • 6 scoops vanilla Gnarly Whey (or 3 scoops other protein with ~25g of protein per serving),
  • ⅔ cup egg whites,
  • 3 medium bananas,
  • 2 tablespoon ground flax seeds,
  • 2 tablespoon almond flour/meal (may sub coconut or white flour),
  • 1 teaspoon vanilla extract,
  • 1 teaspoon baking powder,
  • 15 drops liquid stevia,
  • a pinch of salt.
  • 6 pecan halves
  • 1 cup strawberry halves

Preheat oven to 375 degrees Fahrenheit. Blend all but the last 2 ingredients and then pour mixture into baking tin. Top with 6 pecan halves and 1 cup strawberry halves (diced). Bake for 12-15 minutes or until golden brown on top. Let cool and store in refrigerator. This recipe serves 4 and has 3 bars per serving.
