So, I know what you’re thinking…”I thought this girl does keto?!” Yep, I certainly do! But not all of my readers follow a ketogenic diet, nor does everyone in my household. I bet there are a lot of people out there that follow a keto diet that have significant others or children that don’t follow a keto diet either.

So occasionally I’ll share some of the recipes I make that will appeal to the non-keto folk and easy ways to make those recipes keto friendly.

Instant pot and quinoa

So you probably already know, but that bad boy above is my FAVORITE kitchen gadget and it is my meal prep essential! It literally cuts cooking time in half for most things, but most of all I don’t have to baby sit my food. I can multitask. Chop and wash veggies, pop things in the over, do laundry, clean dishes (or put off doing the dishes hahaha—I’m seriously the best at this!).

So the bf doesn’t follow keto, no matter how many yummy keto foods I make him, he always grabs some type of carbs—either adding sugar to his coffee, sandwiches at the grocery store, or grabbing hot and spicy wings. The boy just has to have his carbs! So this week I decided to add some carbs to his meal prep in the hope that he’d end up putting less sugar in his coffee and skip grabbing the processed carbs at lunch time.

This week’s meal prep I ended up adding some truRoots quinoa (I found at target while meal prep shopping with my off Erica) to his lunches I meal prepped for him.

Erica and I seriously had a day just full of errands and hunting down all of the ingredients we needed for meal prep and recipe shooting for the entire week. This was our last stop of the day, after 2 coffees, and you can tell how tired I was by the really puffy bags under my eyes.

1 Minute Instant Pot Quinoa. How to make Quinoa and instant pot.

Fail Proof 1 Minute Instant Pot Recipe

  • Place 1 table spoon of coconut oil in the bottom of your instant pot and turn to sautee mode.
  • Cook until coconut oil is melted
  • Hit cancel and then add 1.5 cups of liquid. I normally add homemade bone broth but you can also add store bought stock or water.
  • Add 1 cup of truRoots sprouted quinoa
  • Place lid on Instant Pot and make sure know is set to sealed
  • Hit manual, make sure it’s set to high pressure and change to 1 Minute
  • After the quinoa has cooked at high pressure, IP will beep. Hit cancel/keep warm and let pressure naturally release.
  • After all pressure is gone, you will be able to open the top from the IP. Be careful and watch out for steam.
  • Scoop out quinoa and place in a separate bowl to cool.

So I know the 1 Minute Instant Pot Quinoa title was a little misleading…start to finish it takes about 20 minutes but it’s an entirely hands off approach and you dont have to worry about it boiling over on the stove top.

How to make quinoa in an Instant Pot.

Ingredients

For the Quinoa

  • 1 Tablespoon coconut oil
  • 1 cup quinoa
  • 1.5 cups bone broth stock or water
  • Pinch salt

For the salad

  • 16 oz cooked chicken thigh
  • 4 cups shredded romaine lettuce
  • 1/4 red onion
  • 1 jalapeno
  • Dressing of choice I prefer a homemade chipotle ranch or cilantro lime dressing for this salad!
  • Cilantro for garnish

This is how I prepped lunches for my bf this week. For me, I simply omitted the quinoa and topped my salad with a half of an avocado to make a perfect keto friendly salad.

****Storage notes. When prepping these quinoa salad bowls, let the quinoa cool completely and then place the quinoa in the bottom of the bowls. Next place the chicken, onions, jalapenos, and top with shredded lettuce. I use glass storage containers to meal prep and make a full mason jar full of homemade salad dressing for my bf to take to work for the week.

    I’ve always found quinoa hard to make correctly but since getting our Instant Pot even I can make it perfectly with this recipe.
