TGIF!!! And I really mean it! This week has been absolutely INSANE! Work life + blog life + social life + Thanksgiving = 1 stressed woman.
I hope you had an amazing Thanksgiving! I went over to my parent's house for a nice quiet Thanksgiving dinner. It was just the fam and I didn't have to cook anything...I just brought wine LOL. Sometimes A lot of the times after a day full of cooking/videoing, I'm just too tired to cook anything else and I just end up eating cereal or a PB&J sandwich for dinner. Does this sound like you too?
On another note, I was so proud of myself. I ran 2.5 miles on Saturday, ran/walk 3.5 miles on Sunday, I lifted weights and did cardio on Tuesday and then I power walked ~4 miles (including 2 bridges) on Thanksgiving morning. And believe it or not, I was most sore after the power walk session LOL. I guess I used a bunch of muscles that I don't normally use. I'm finally kicking my butt into high gear for this Disney half marathon. I'll definitely be able to finish it, but with the way things are looking it'll be more of a run/walk race, but at least I'm out there moving!

Easy Pumpkin Pie Energy Balls
Ingredients
- 1 cup canned pumpkin
- 8 pitted dates
- ¼ cup coconut flour
- 1 teaspoon cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon nutmeg
- ¼ Nescafe Taster's Choice Coffee
Instructions
- In a food processor blend dates.
- Add canned pumpkin and dry ingredients.
- Blend until combined.
- Optional-refridgerate for 15 minutes for ease of making.
- Form into balls.
- Optional: Spread out chocolate chips and coconut flakes and roll pumpkin energy bites over toppings.
- Refrigerate remaining bites.
