So the winter is long gone down here in sunny Florida and the first thing that comes to mind when I think winter is a campfire and campfires remind me of s'mores! I think we literally had 3 days of winter down here and I'm not complaining. I am such a Florida girl, I don't think I could survive anywhere else. Whew it’s already Monday again! Sunday I made these amazing Gluten Free Protein Pancakes with Blueberry and Raspberry Toppings. I have never had such fluffy pancakes, while attempting a gluten recipe from scratch. I just added a little bit of this and a little bit of that, writing everything down in the hopes that it turned out delicious so I could share it with you all.
