If you're like me and have already tried the packaged protein pancake mixes and found them lacking and also tried the Paleo version of protein pancakes where you mix the egg with the banana and hope for the best and they turn out an utter disaster, then this recipe is for you! I decided to make my own protein pancake recipe which I have now perfected and today I took my gluten-free protein pancake recipe and combined it with one of my favorite comfort foods to make these Peanut Butter and Jelly Protein Pancakes.

Whew it’s already Monday again! Sunday I made these amazing Gluten Free Protein Pancakes with Blueberry and Raspberry Toppings. I have never had such fluffy pancakes, while attempting a gluten recipe from scratch. I just added a little bit of this and a little bit of that, writing everything down in the hopes that it turned out delicious so I could share it with you all. Thankfully it turned out better than expected and I am sharing it with you all today as my Meatless Monday Recipe.
