Turn Smoker to 225F, and heat for about 15 minutes or until the smoker reaches temperature.

Sprinkle the pork chops with salt and pepper

Grease the grates and add the pork chops. Smoke until they reach desired temperature.

Prepare to reverse sear the pork chops. Add the butter to a cast iron skillet over high heat.

Add the pork chops, searing on each side. Remove when the pork chops reach 145F.

Let sit for 5 minutes before cutting.
