Ingredients

  • 10 oz bacon wrapped chuck tender filets
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1.5 tablespoon butter

Instructions

  • Let the chuck tender filets come to room temperature (~30 minutes). Season with salt and pepper.
  • While the steak is coming to room temperature, turn on your smoker to 225F and let it come to temp (~15 minutes).
  • Place the steaks on the smoker and cook for 35-40 minutes at 225F, or until the steaks reach an internal temperature of 115-120F.
  • Next, remove the steaks from the smoker.
  • In a cast iron skillet, over medium high heat add the butter. Let melt and then add the steaks. Sear the steaks on all sides until it reaches an internal temperature of 135F for medium rare.
  • Let sit for 5 minutes before cutting.
