Pre-heat oven to 450F
Slice turkey breast in half long ways (butterfly)
Flatten out turkey breasts so they increase in surface area
Filling: on medium heat add olive oil, garlic and spinach.
In a bowl combine spinach mixture, ricotta, and half of the mozzarella cheese. Set aside.
In a bowl place egg whites. Place bread crumbs on a plate.
In a large baking dish, coat lightly with oil or spray.
Take one turkey breast. Lay it out flat and put a quarter of the spinach mixture close to the edge of the turkey (not in the middle). Roll up the turkey making sure that all edges a tight.
Very carefully dip rolled up turkey breast into the egg whites, making sure to coat completely.
Again very carefully roll the turkey roll up into the bread crumbs and coat completely.
Place turkey breast in the oiled baking dish seam down. Repeat for 3 other turkey breasts.
Bake for 25 minutes. Take dish out of oven and top with remaining mozzarella cheese.
Cook for 3 minutes or until cheese is melted.
Top with fresh basil.
