Blackstone Zucchini

Make perfectly cooked zucchini on the Blackstone Griddle. Quick and easy, these make for a perfect side dish! These grilled zucchini are low in carbs and great for a paleo diet!

Ingredients

  • 2 zucchini cut into 2 inch strips/chunks
  • ¼ cup avocado oil
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon coarse salt
  • teaspoon black pepper

Instructions

  • First wash the zucchini
  • Then cut the zucchini into 2-3 inch chunks.
  • In a large bag or bowl add the zucchini, oil, garlic, Italian seasoning, salt and pepper.
  • Zip the baggie shut and shake until the zucchini is evenly coated with seasoning.
  • Preheat the Blackstone to medium high heat. Cook the zucchini for 2-3 minutes and then flip and cook for an additional 1-2 minutes. Zucchini should be al dente.
