Roasted Red Pepper Cauliflower Mash

Ingredients

  • 15 oz package of frozen cauliflower
  • 1/4 cup coconut milk
  • 8 oz roasted red peppers
  • 2 Tablespoons water

Instructions

  1. In a microwave safe container, combine frozen cauliflower and 2 tablespoons water. Cover and cook on high for 4 minutes.
  2. Place cooked cauliflower into a food processor and pulse until rice like consistency.
  3. Add roasted red peppers and coconut milk into the food processor and pulse until smooth.
