Easy Pumpkin Pie Energy Balls

I'm clinging onto Fall with these tasty Fall inspired Easy Pumpkin Pie Energy Balls. They're slightly sweet and packed full of spice. They're perfect for snacking or use them as a topping on your oatmeal or smoothie bowl.

Ingredients

  • 1 cup canned pumpkin
  • 8 pitted dates
  • ¼ cup coconut flour
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon nutmeg
  • ¼ Nescafe Taster's Choice Coffee

Instructions

  • In a food processor blend dates.
  • Add canned pumpkin and dry ingredients.
  • Blend until combined.
  • Optional-refridgerate for 15 minutes for ease of making.
  • Form into balls.
  • Optional: Spread out chocolate chips and coconut flakes and roll pumpkin energy bites over toppings.
  • Refrigerate remaining bites.
