Grilled Blackstone Acorn Squash

  • 1 Acorn Squash
  • ¼ cup butter melted
  • 1 teaspoon kosher salt
  • 1 teaspoon Seasoning Italian
  • ¼ teaspoon black pepper ground
  • 3 cloves garlic minced

Instructions

  • Preheat griddle to medium heat.
  • Cut the squash in half. Take the seeds out with a spoon.
  • Next slice the squash into ½ to ¾ inch thick slices.
  • In a large glass bowl, add the butter. Melt the butter.
  • Once melted, add the spices. Whisk until spices are combined.
  • Add the squash slices to the bowl and coat with the butter mixture.
  • Add the acorn squash to the grill. Cook for 10 minutes and then flip and cook for an additional 10 minutes or until the squash is tender.

Notes

Acorn squash is a firm vegetable that can be intimidating to cut. Make sure you cut your squash on a hard, flat surface and use a sturdy knife with a long sharp blade. Cut the top off first so you can cut the squash in half more easily. If you are having trouble getting the edge through the squash, try using your other hand or a rubber mallet to add extra pressure to get the knife the rest of the way through.
