Homemade Keto Meatballs in the oven

Make homemade keto meatballs in just 35 minutes! These low carb meatballs are great for feeding a crowd or a weeknight dinner.

Ingredients

  • 2 pounds ground beef I used 80/20
  • 2 eggs large
  • ¼ cup onion minced or grated
  • 3 cloves garlic minced
  • 2 tablespoon basil finely chopped fresh
  • 2 tablespoon parsley finely chopped fresh
  • cup Parmesan cheese shredded or grated
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup almond flour
  • 2 tablespoon heavy cream
  • 1-2 tablespoon water

Instructions

  • Pre-heat oven to 400F.
  • In a large bowl add the ground beef, eggs, onion, garlic, basil, parsley and parmesan cheese. Mix until well combined.
  • Then add the salt and pepper. Next add the almond flour and heavy cream. Mix until the meat mixture is easily able to form a loaf. If the mixture is too dry add the water 1 tablespoon at a time.
  • Next form the meat into 2 inch balls.
  • Transfer the meatballs to a baking sheet. Bake for 16-20 minutes or until internal temperature reaches 160F.

Notes

  • Serve with low carb spaghetti sauce and zoodles for a low carb meal!
  • Makes about 45 keto meatballs
  • If you don’t want to bake all 45 meatballs at once you can freeze the meatballs on the baking sheet. Once frozen you can transfer them to an airtight container or large gallon baggie.
