Easy Broiled Chicken Leg Quarters

These Broiled Chicken Leg Quarters are perfect for an easy dinner meal! Garlic and fresh lemon juice are used to season this delicious dish! Not only are these chicken quarters made in only 30 minutes, they're paleo and keto friendly too!

Equipment

  • 1 9x9 baking dish
  • 1 meat thermometer
  • 1 basting brush

Ingredients

  • 2 chicken leg quarters
  • 2 tablespoon avocado oil
  • 3 cloves garlic minced
  • 1 lemon juiced
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Pre-heat your oven to broil (high heat if there is a broiler setting). Make sure the oven rack is one below the top rack.
  • With oil or butter, grease the bottom of a 9×9 casserole dish, roasting pan or baking dish. Next, place the chicken leg quarters skin side up in the casserole dish.
  • In a small bowl, combine the avocado oil, salt, pepper, garlic and lemon juice. Brush the chicken with the oil mixture, save some for basting later.
  • Broil the chicken for 8 minutes uncovered, then flip the leg quarters over. Baste with some of the seasoned oil mixture.
  • Cook for an additional 8 minutes and flip the chicken back to right side up. Baste again.
  • Cook for 6 minutes then cover the baking dish with aluminum foil and cook for an additional 4-8 minutes.
  • Remove from the oven when the chicken reaches 165 degrees. Let the chicken rest about 5 minutes before serving. Garnish with parsley.

Notes

How long do you broil chicken leg quarters?
Total cooking time depends on how large the chicken leg quarters are. Mine were on the larger size and cooked for a total of 29 minutes. Make sure to check the temperature frequently because you don't want to over-cook your chicken.
