Ingredients

  • 4 chicken thighs
  • 2 tablespoon avocado oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cloves garlic minced
  • Juice of 1 lemon
  • Parsely

Instructions

  • Pre-heat the oven to broil. Make sure the oven rack is in the middle, too high will burn the chicken.
  • Grease the bottom of a 9x9 casserole dish. Place chicken thighs skin side up in the casserole dish.
  • Combine the avocado oil, salt, pepper, garlic and lemon juice in a small bowl. Brush the chicken thighs with the oil mixture, save some for basting.
  • Broil for about 22-24 minutes, flipping around 7 to 8 minute mark and again at 13/14 minute mark. Baste with the oil mixture after turning. Remove from the oven when the chicken reaches 165 degrees. Let the chicken rest about 5 minutes before serving. Garnish with parsley.

Notes

  • Store leftovers in an airtight container for up to 5 days
  • Check chicken internal temperature with a meat thermometer in the thickest part. Make sure it reaches 165F
  • If you use boneless chicken thighs, reduce cooking time to 7-8 minutes or until the chicken reaches 165F
  • If you don't have a baking dish, you can even use a rimmed baking sheet.
