  • First, unwrap and wash your cauliflower.
  • Next, roughly chop the cauliflower into florets.
  • Place the florets into a silicone trivet and place that in your instant pot.
  • Next put 1 cup of water into your instant pot.
  • Put the lid on your instant pot and make sure the nob is set to closed.
  • Hit the manual button, high pressure and set time to 1 minute.
  • After your instant pot has cooked the cauliflower for 1 minute at pressure, hit "cancel" and use quick pressure release method to release pressure.
  • After all the pressure is gone, remove the lid to the Instant Pot. 
  • Carefully removed the trivet that contains the cauliflower. 
  • Drain the water from the stainless steel pot and return the pot to the instant pot.
  • Place extra virgin coconut oil in the pot. Turn Instant Pot to sauté mode.
  • With a potato masher or wooden spoon, mash cauliflower until it is a rice consistency.
  • Add the juice of 1 lime to the cauliflower. Stir and let cook for 1 minute.
  • Remove cauliflower from heat.
  • Top with minced cilantro.
