First, unwrap and wash your cauliflower.
Next, roughly chop the cauliflower into florets.
Place the florets into a silicone trivet and place that in your instant pot.
Next put 1 cup of water into your instant pot.
Put the lid on your instant pot and make sure the nob is set to closed.
Hit the manual button, high pressure and set time to 1 minute.
After your instant pot has cooked the cauliflower for 1 minute at pressure, hit "cancel" and use quick pressure release method to release pressure.
After all the pressure is gone, remove the lid to the Instant Pot.
Carefully removed the trivet that contains the cauliflower.
Drain the water from the stainless steel pot and return the pot to the instant pot.
Place extra virgin coconut oil in the pot. Turn Instant Pot to sauté mode.
With a potato masher or wooden spoon, mash cauliflower until it is a rice consistency.
Add the juice of 1 lime to the cauliflower. Stir and let cook for 1 minute.
Remove cauliflower from heat.
Top with minced cilantro.
