Wow! What a week. This week has been full of surprises. Both good, bad, and I don’t know what just happened moments. To make a long story short, the week did not go exactly how I planned. My vegan eating was on point, but my workouts were not. I even ate a few vegan pre-workout meals and the workouts never happened. That’s what life is. What’s the Big Brother saying…expect the unexpected…….
One thing that I’ve learned is that when I get stressed I normally tend to make poor decisions especially with food. Since starting this 30 day vegan challenge I’ve found out that it is 100% easier when you are prepared for the day ahead and I do this by meal prepping.
On the off-chance I’m running late and forget my food for the day, I’ve found a few places around town that I know have vegan friendly options, and one of those places is Smoothie King.
I’m excited that they now have Veggie Blends. These are smoothies that are blended with fruit and veggies (moms, this is an easy way to get your kid to eat more veggies!). My favorite is the Apple Kiwi Kale! It tastes like apple at first, but then hits you with the sweet kiwi-ness at the end. You don’t even taste the kale! They also have a Veggie Avocado Pineapple, Berry Carrot Dream and Carrot Kale Dream.
On top of being delicious, it’s low in fat and packed with vitamins, minerals, and carbohydrates which makes it the perfect vegan pre-workout meal or snack. It’s easily digested and has plenty of carbs to fuel an awesome workout!
Something that has almost de-railed me is when my boyfriend cooks on the grill. The smell permeates throughout the entire house and it smells absolutely delicious! It’s one of those smells that just reminds me of backyard barbecues with friends during the summer.
Like, as I write this post, he is grilling steak and my mouth is watering. Other than when he is cooking, I don’t crave meat or dairy at all. Last night he made us falafels and OMG they were amazing. We put them in pitas, and topped them with avocados and mango chutney and they were gone in 2.0394857 seconds. Just kidding. They were gone quick though and I ate 2 because they were so good!
Life on the vegan diet has been great. I feel awesome, I have way more energy than before and I’ve actually lost weight! I’ve lost a little over 2 pounds since I started last Wednesday and I haven’t been able to get in all of my workouts in either.
Truth be told, I got really burnt out with writing a blog post every day, working full-time and trying to workout 5-6 days per week. Some days I didn’t even want to run the mile for time as I was just burnt out. That’s why all of a sudden I stopped writing the my daily intake and workout posts.
I have been eating 100% vegan, no cheats and I am so proud of that. I honestly didn’t think I could actually eat this way and not feel deprived.
I’ve started to make my morning breakfast burritos with high fiber high protein tortillas, black beans, shredded sweet potatoes, red onions, vegan cheese and topped with tabasco (chipotle is my fav). I eat this after I have my green smoothie or espresso + vegan protein powder in the morning.
I’ve continued with my raw cashews for a snack and then lots of fresh fruit and some kind of beans or chia seed pudding for lunch. Dinner has been something different every night which has been nice to switch things up and have a lot of variety.
