This Super Green Smoothie is packed full of antioxidants and is a perfect way to start your morning or great to come home to after a long day at work or after a hot sweaty workout.
Since I’ve been home all week recovering and not being able to workout I’ve been going a little stir crazy cooped up in the house the whole time. One thing I have been doing is stepping up my smoothie game. I’ve been mixing up my fruit and vegetables and trying to come up with something unique but tasty and this one is a winner. Super easy and doesn’t really taste like the typical green smoothie.
What you need:
- 4 Beet root leaves
- 3 medium kiwis
- 1 cucumber
- 1 1/2 cups ice
- 1 cup water
You will need to remove the leaves from the beets, remove the skin from the kiwis, wash the outside of the cucumber and then chop the cucumber into 2 inch chunks. Throw everything into a blend and pulse until smooth.
This recipe makes two 16 ounce smoothies. You know me and know that I like to meal prep and prepare in bulk, but since I’m at home all week I decided not to since I will have plenty of time to cook and prep and this will allow me to test out more smoothie recipes.
Also, I have decided to leave out bananas from my smoothies this week and opt for smoothies like this that are packed full of fiber. Anyone who has every been on pain killers probably knows why (TMI). I’ve just been drinking plenty of water and increasing my fiber intake, making sure that I’m getting enough insoluble fiber (dark green leafy vegetables, bran, nuts, seeds, raisins, grapes, cucumbers) to keep things flowing…….Anyways I hope everyone has a happy Monday.
