Bursting with zeal and flavor, these Roast Beef Sliders will be a crowd pleaser at any party or event. They’re topped with Smoked Gouda and Caramelized Onions and are sure to be drool worthy.
I must confess. Growing up I was never a huge roast beef eater. I think I can count on my two hands the number of times that I had actually eaten roast beef. It was just something we never had in the house growing up because my mom was a picky eater and I never ventured out on my own to try it, let alone cook it…until now!
Boy was I amazed at my own cooking! Well, half of my own cooking. Actually, my better half did the cooking and I did the prepping, assembling, and photography (as well as a lot of the eating LOL).
I can’t say enough how fortunate I am to have David in my life. He’s my best friend, my travel partner, my workout buddy and my unconditionally loving boyfriend. Fate had a funny way of bringing us together, but I wouldn’t have it any other way.
Since David is the only one of us that had ever cooked a roast beef before, I let him tackle the Florida Beef London Broil. Being a dietitian, you’d think I would know what cut of beef to use for a roast beef, but I didn’t. I’m so glad the friendly meat cutters at our local grocery store pointed us in the right direction.
Since I work with numbers all day long, I figured I would throw some numbers at you. Fun fact #1) A single serving of lean beef is 3 ounces (approximately the size of a smart phone), has an average of 150 calories and less than 10 grams of fat. Fun Fact #2) One serving of beef meets 50% of your recommended daily value of protein. Fun Fact #3) Not only does beef provide complete, high quality protein, but it also contains high amounts of zinc, iron, and vitamins B6 and B12, along with other key vitamins and minerals your body needs.

I was shockingly surprised at how quick and easy cooking the London Broil was (for David that is).
It was done in way less time than I figured and cooked perfectly. We did let the roast beef cool down to room temperature before cutting so that it would hold in all of the moisture.
The London Broil was way better than I ever expected! I ate the roast beef sliders that day for lunch, I ate more the next day post run with my girl Erica and then I cut up the rest of the steak and put it into salads. Normally I would get tired of leftovers, but the roast beef was so versatile I didn’t get bored at all. I was actually really disappointed when we ran out .
Roast Beef Sliders topped with Smoked Gouda and Caramelized Onions

Ingredients
- 2-2.5 pounds london broil
- Salt
- Pepper
- Garlic Powder
- Potato Slider Rolls
- Spring Mix
- Gouda Cheese
- 1/2 medium Sweet Onion
- 2 Tablespoons honey
- 2 Tablespoons olive Oil
Instructions
- Pre-heat oven to 325F
- Combine desired amount of salt, pepper and garlic powder into a small bowl.
- Cover outside of london broil with spices
- Place a meat thermometer into the london broil
- Cooke for ~1 hour and 15 minutes or until temperature reads ~125 for medium rare
- Let cool.
- Slice sweet onion into thin rings.
- Heat a large skillet over medium heat.
- Add olive oil, honey and onions.
- Stir occasionally cooking for about 15 minutes or until onions become caramelized.
- Once beef has cooled. Cut meat as thin as possible.
- Place beef on sliders and top with spring mix, gouda, and caramelized onions.
Living in Florida, I am very fortunate to have local Florida Beef! Just last year, my parents and I, along with another couple, split half of a cow. It was the best tasting beef and I can’t wait to do it again this year.
