Raspberry Cheesecake Ice Cream is a delectable dessert that packs a rich and indulgent flavor. It's the perfect treat for anyone with a sweet tooth.

Raspberry Cheesecake Ice Cream

I love making Raspberry Cheesecake Ice Cream in the Ninja CREAMi. It comes out super creamy with a delicious raspberry profile. It's made with a secret ingredient...goat milk!

You can also make this recipe with cow's milk, like Fairlife. I've made it both ways, but by far, it comes out much creamier when it's made with goat milk.

This homemade raspberry cheesecake ice cream is perfect when you want an indulgent, but healthy ice cream recipe.

If raspberry isn't your favorite, you may also like this delicious Ninja CREAMi Blueberry Ice Cream or this Strawberry and Banana Ice Cream recipe.

If you want an ice cream with a little more protein, check out this Chocolate Protein Ice Cream or this Chocolate Peanut Butter Protein Ice Cream.

Why you'll love this Raspberry Cheesecake Ice Cream

  • Easy to make - with only four ingredients that you can find at your local grocery store.
  • Creamy texture- The goat's milk makes this ice cream super creamy!
  • Simple ingredients - you need only four ingredients to make this fantastic recipe

Ingredients

  • Milk (goat milk or whole milk)
  • Cream cheese
  • Maple syrup
  • Fresh raspberries
A jar of milk, raspberries and raspberries on a table.

Tips & Tricks

Be sure to prepare in advance. This recipe takes 18-24 hours to freeze. I like to plan ahead and make it before the weekend. This is when I always want an extra sweet treat.

Tools to make this easy recipe

  • Ninja Blender – I love my ninja blender. Not only can you use it for the obvious, like smoothies and shakes, but it also works perfectly for making the ice cream base!
  • Ninja Creami ice cream maker – I am in love with this Ninja Creami.
  • Ninja Creami Pints - I opted for these pints because they were about half the price, but be weary if you need them quickly; it took about three weeks to get here. They did have some prime options for other pint containers, but I was being thrifty.

How to make Raspberry Cheesecake Ice Cream

  1. Add all ingredients to a blender. Blend until smooth.
  2. Next, transfer the mixture into the Ninja Creami pint and place the lid on.
  3. Transfer the pint to the freezer and freeze for at least 24 hours.
  4. After 24 hours, remove the lid and place the pint into the pint holder. Place the lid with the blade on top and lock it into place.
  5. Run the Ninja Creami on the ice cream function. You will need to respin twice for the best texture.
  6. Enjoy!

Substitutions

If you don't have goat's milk, you can always use regular milk like Fairlife milk. Just remember this will change the nutrition of your ice cream and possibly the texture.

Don't have raspberries, try subbing them out for blueberries or blackberries.

Even though blueberries, blackberries and raspberries are all types of berries, they have some differences. Blueberries are known for their sweet taste, while raspberries have a tart and slightly sweet taste.

Additionally, blueberries have a firmer texture, while raspberries are softer and have a slightly grainy texture. Blackberries, are similar in taste and texture to raspberries but have a lower carb count.

How to store

Store the raspberry ice cream in the freezer with the lid on. It should last 3 to 6 months in the freezer.

If you eat half of the ice cream, make sure to smooth the top and store it in the freezer with the lid on. When you go to eat it again, run it on the ice cream function like normal.

If I use light cream cheese do you think that would alter the consistency or flavor of this?

I should have listened to my gut on this one. Tasted like raspberries only, zero cheesecake flavour.

If you want a stronger cheesecake flavor - you can add in a tablespoon of cheesecake pudding mix and mix in some graham crackers.

I made this two days ago following the recipe, except I used one cup of keto milk (half cream, half water) and 1/4 cups half-and-half, and I substituted 1/4 cups allulose. This is the best ice cream I have made yet, and my daughter was raving about it. I will make this frequently.
