It’s almost Christmas and I have not bought one single gift for anyone. Nope, not a one. I have been a total slacker on the gift buying and it’s mostly from over booking myself, plus the vacation to California didn’t help matter much. One thing I try to do is save time anywhere I can and one way I do that is with meal prepping. My newest meal prep kick have been these Peanut Butter Coconut Protein Balls.
These Peanut Butter Coconut Protein Balls are perfect for an on the go breakfast or as part of a snack to get you through the day. They are soft and moist and keep very well once refrigerated. These can also be made vegan by switching out whey protein powder for a vegan protein powder option.

I completely forgot about the kit and it was tucked away somewhere in my kitchen and I recently stumbled upon it. I did actually use the kit to make sushi one time long ago.
With these super easy no bake protein balls all you do is throw everything into the food processor, form them into balls, roll them in the coconut flakes and then store whatever you don’t eat in the fridge. Insider tip: to make them easier to roll get your hands slightly wet, but not too much or you’ll find out why ????
